PROTECT THE ISOHUMULONES IN BEER -
INCREASE THE THIOLS!
ABSTRACT
In the context of flavour stability that is the conclusion
of a Danish Researcher Team. They have looked into
the mechanism of stale flavour development in stored
beer. It is known that in the presence of metal ions,
such as iron and copper, molecular oxygen converts
into superoxide radicals, peroxyl radicals, and hydrogen
peroxide. In the absence of antioxidants, hydrogen
peroxide reacts with metal ions via the Fenton reaction
and generates hydroxyl radicals that react with most
compounds with almost no selectivity. Since ethanol is
the most abundant component in beer, a large fraction
of hydroxyl radicals reacts with ethanol, thereby forming
1-ydroxyethyl radicals. The 1-hydroxyethyl radicals can
either be quenched by antioxidants or react with other
beer components, such as bitter acids from hops, or with
oxygen to form acetaldehyde and peroxyl radicals leading
to a chain reaction that creates more oxidative damage.
In this study they have found that the isohumulones
are an easy victim and account for almost 90% of
the reaction with 1-hydroxyethyl radicals. Whereas the
thiols acted as secondary antioxidants. However, with
normal concentrations and under normal conditions they
only account for 10% of the reaction with 1-hydroxyethyl
radicals. They hypothesize that increasing the
concentration of thiols can bind more staling aldehydes
in beer and hereby increase flavour stability. And where
could these thiols come from? Of course from hops!

USA: Craft beer production, number of breweries grow in first half of 2018
|
Growth for small and independent craft brewers remained stable for the first half of 2018, according to new mid-year metrics released by the US Brewers Association (BA)—the not-for-profit trade association dedicated to small and independent American brewers.
Production volume for the craft segment increased five percent during the first half of 2018.
“While more mature, the market continues to show demand for small and independent craft brewers,” said Bart Watson, chief economist, Brewers Association. “There are certainly industry headwinds, but this stabilized growth rate is reflective of the market realities that exist for brewers today.”
As of June 30, there were 6,655 active breweries, up from 5,562 during a comparable timeframe last year. An estimated 2,500 to 3,000 breweries are in planning, based on active Alcohol and Tobacco Tax and Trade Bureau (TTB) licenses.
“The data demonstrate that 2018 is on pace to have the highest number of brewery openings and closings to date. However, even as breweries close, openings continue to far outpace the number that shutter,” added Watson. “New players looking to enter the space should be aware of the constructs of the current landscape, work to differentiate themselves and will need to make quality beer to succeed.”

USA: Boston Beer’s return to growth continues for a second consecutive quarter
|
Boston Beer Company’s return to growth continued for a second consecutive quarter, Brewbound reported on July 27.
The company — which makes the Samuel Adams, Angry Orchard, Twisted Tea, and Truly Spiked & Sparkling products —reported on July 26 its second-quarter earnings results, which were highlighted by a 10.2 percent increase in net revenue to $273.1 million. For the 26-week period ending June 30, Boston Beer’s net revenue was up 13.2 percent, to $463.6 million.
Boston Beer’s year-to-date depletions are up 11 percent due to increased demand for Truly, Twisted Tea and Angry Orchard products, the company said, and only partially offset by Samuel Adams’ declines. In the last 13 weeks, depletions increased 12 percent.
As a result of those double-digit depletion trends, Boston Beer has adjusted its full-year depletion guidance. It is now expecting depletions (sales-to-retailers) to grow between 7 and 12 percent in 2018.

Japan: Kirin ramping up beer output as ‘unprecedented’ heat wave continues in Japan
|
As Japan’s “unprecedented“ heat wave continues to blanket the country, sales of summer essentials such as beer, ice cream and air conditioning units have seen notable sales increases across the country during July, The Drinks Business reported on July 26.
The ongoing heat wave in Japan has killed 80 people and hospitalised 35,000 since the beginning of July.
Major brewer Kirin is already planning to ramp up its production at all of its factories across the country, and increase its low-malt output by about 20% over last year, according to Japanese newspaper Yomiuri Shimbun.
Meanwhile Suntory Spirits also plans to increase production of ‘chuhai’, a canned alcoholic drink, as well as its whisky and soda highballs by 15% in the two months of July and August.
The country’s beer shipments in the first half of 2018 dropped for the sixth year, due to increased retail prices but the prolonged summer heat might help stimulate sales in the coming months.
In addition, sales of air conditioners in the country rose in both June and July. Electronics company Daikin Industries will increase its air conditioner production by 10% from July to September, according to the newspaper.

New Zealand: Lion buys Harrington’s boutique craft brewery
|
Lion New Zealand has clinched a deal to buy Harrington's craft brewery - one of the pioneers in the boutique sector, The Press reported on July 31.
When John Harrington set up the business in Christchurch 27 years ago, the only other independent brewer of note was Nelson-based McCashin's which Lion bought in 1999, although the latest generation of the McCashin family continues a local operation.
The Harrington's brand will be integrated into the Lion's den for wider national sales, providing a niche between the traditional Mac's brews and more intense hop-flavoured beers of Emerson's, which it acquired in 2012.
Harrington's founder, John Harrington said the market was "a very different place" from when he started and he had been thinking for a while about how best to carry the business into the future.
He said he had a relationship with Lion since his publican days and it had a strong track record of growing craft beer brands.
"We're confident that the work we've done in creating a strong legacy will be protected, and even strengthened by this move," Harrington said.
Lion plans to invest about NZ$2 million updating the Christchurch brewery in the initial stages to reinvigorate the business and improve brewing processes.

Ireland: Boortmalt adjusts malting barley protein specifications
|
Boortmalt has adjusted its malting barley protein specifications for this year’s harvest. Malting barley supplied to the company can now have a protein content as high as 12%, Agriland reported on July 30.
Growers who supply Boortmalt deliver both distilling and brewing barley. Distilling barley takes up 30% of the contracted tonnage and brewing barley takes up the remaining 70%.
Distilling barley only reaches the hopper when it has a protein content of less than, or equal to, 9.3%.
At the beginning of the harvest, the protein specifications for malting barley stated that protein content must be at, or below, 10.8%.
However, protein contents from early crops have been high in many cases, with a range of between 9% and 14% reported to AgriLand in the south and midlands so far.
As a result, Boortmalt has changed the brewing specification for protein content to 12%.
The decision taken by the maltsters comes as there is expected to be a shortage of malting barley across Europe.
The total harvest of malted barley across Europe has been predicted to drop by 500,000 tonnes in some cases.

South Korea: Diageo accepts applications for voluntary retirement amid deteriorating profitability
|
Diageo Korea, the purveyor of Windsor and Johnnie Walker, has recently carried out large-scale restructuring to cope with its deteriorating profitability, the U.K.-based distiller's local subsidiary said on August 1.
According to the top whisky maker in the Korean market, it accepted applications for voluntary retirement last month from its employees who have worked for the company for more than five years.
Over 30 employees including executives and branch managers reportedly applied.
This is the first time in five years that Diageo Korea has carried out such a program.
The liquor firm agreed with its union to give severance pay and additional compensation to the retirees, according to industry officials.
"We have actually reshuffled our organization every year, but it has been a long time since we accepted applications for early retirement," a Diageo Korea spokeswoman said. "The reason for the recent reform is to enhance our efficiency and revitalize the company."
Diageo Korea posted 325.7 billion won ($293 million) in sales between July 2016 and June 2017, down 4.8 percent from 342.1 billion won for the same period from 2015. It was the company's first failure to reach 350 billion won in sales since 2007.
