HOW HOPS AND YEAST INTERACT
ABSTRACT
This is a large research field and studies to look into it
are only starting. Our Team looked into hop aroma of dry
hopped beers using two different yeast strains (Califorina
Ale and German Koelsch yeasts) and two different
hop varieties (US Cascade and Hallertau MittelfrUEh).
Dry hopping was done on an equal hop oil equivalent
(4ml/hl) after 3 days of fermentation. Our results show
that hops are a main source of 3MH although malt also
delivers this thiol into beer. The concentration of 4MMP
was mainly dependent on the hop variety. Beers brewed with Cascade showed a concentration whereas beers
brewed with Hallertau Mittelfrueh or unhopped beers
had lower concentrations or no 4MMP was detected.
The results suggest that the California Ale Yeast has
a higher ability to release monoterpene alcohols from
precursors. The California Ale beer with Cascade
had higher levels of geraniol and citronellol and was
described as more citrusy, The higher levels of 4MMP
in the beers made with Cascade hops also showed
higher intensities for "red berries" in the sensory profiling.
Our results show that hop variety has a stronger influence
than yeast on the levels of 4MMP. Higher levels of
linalool in beers made with HHA also match the
sensory description of more intense floral flavour.

American whiskies and tequila drove growth for Beam Suntory in the U.S. in the six months through June, representing the first half of the company’s fiscal year, the Shanken News Daily reported on August 7.
In the U.S., Beam Suntory’s sales were up by mid-single-digits on an organic basis in the first half, with Bourbons like Jim Beam, Maker’s Mark, and Basil Hayden’s leading the way. Sauza Tequila, in particular its higher-priced Hornitos offering, also contributed to the sales rise.
In control states, Beam Suntory’s volume was up 4.9% overall in the six months through June, with growth led by Jim Beam (+7.2%), Maker’s Mark (+9.5%), and Sauza (+11%). Among other key brands in control states, DeKuyper liqueurs were down 5.5%, but Pinnacle vodka—which has been in decline the past few years—rebounded with 2.9% progress in the first half. According to Impact Databank, Jim Beam was up 6.5% to 4.9 million cases in the U.S. in 2017 (including flavors), while Maker’s Mark grew 4.7% to 1.6 million cases, and Sauza rose 10.7% to just under 2.5 million cases, driven by Hornitos, which posted 12% growth to 810,000 cases. USA: Canarchy Craft Brewery Collective’s sales outpacing overall US craft beer segment
|
Midway through 2018, the Canarchy Craft Brewery Collective is outpacing the overall U.S. craft beer segment, Brewbound reported on August 6.
The Brewers Association (BA) reported last week that growth for small and independent U.S. brewers had “stabilized,” with production growing 5 percent through the first six months of 2018.
The Fireman Capital-backed brewery consortium — whose brands include Oskar Blues, Cigar City, Deep Ellum, Perrin Brewing, Three Weavers, and Utah Brewers Cooperative (Wasatch and Squatters) — is growing faster than the category, with off-premise sales up 15.4 percent in the total U.S. multi-outlet and convenience store channel year-to-date.
In an email to Brewbound, Canarchy spokesman Chad Melis said the platform is “aggressively positioned to grow and scale.” The company acquired Texas’ Deep Ellum and California’s Three Weavers over the course of the last two months, and is ranked by the BA as the ninth largest U.S. craft brewery, with 10 brewing locations throughout the country.
Melis offered a few highlights of Canarchy’s year so far.

USA, WI: 608 Brewing Co ready to open in La Crosse

Phil Humphrey doesn’t mince words when he talks about his favorite beer styles and what he wants to brew at 608 Brewing Co., The Growler reported on August 6.
“We’re focusing more on the newer, trendier beer styles—you could say the New England IPA for sure,” Phil says of the soon-to-open La Crosse, Wisconsin, brewery.
About four years ago, Phil really started getting into IPAs. Unfortunately, the ones he liked to drink were rarely, if ever, distributed to Minnesota. Rather than seek them out via trade groups, which he often did, he started to tinker with his homebrew recipes in order to mimic the beers he liked. That led him to diving into kettle sours and pastry stouts (a term he doesn’t exactly like, but one used to describe stouts heavily brewed with adjuncts like cacao nibs, coconut, and other items also used in making pastries).
Like many homebrewers-turned-full time brewers, Humphrey’s love of beer, boredom with his day job, and craving of a change added up to dreaming about opening a brewery of his own. Plus, he thinks La Crosse could use more beer. “I think this area is very undersaturated,” Phil says. “Especially for a town that’s known for beer drinking.

USA, LA: The Dixie Brewing Company returning to New Orleans
|
The Dixie Brewing Company, LLC. announced the company’s restoration of brewing operations to the city of New Orleans as part of a multimillion dollar project on the Industrial Canal in New Orleans East, the Tucson News Now reported on August 7.
Dixie Beer, which was established in New Orleans in 1907, had developed into one of the Gulf South’s iconic craft beer brands, but has been brewed out of state since Hurricane Katrina. Intending to return the beer to its former glory, the late Tom Benson and his wife Gayle, purchased Dixie Brewing Company in 2017. Since the purchase of the brand, Mrs. Benson and her late husband’s intention has been to return the Dixie Beer’s production to New Orleans.
“We are thrilled to be announcing this development here in New Orleans East, as we renovate a building no longer in commerce and turn it into a center of vibrant economic development,” said Gayle Benson. “This is the realization that my late husband Tom (Benson) had and his goal was to bring business to New Orleans and to be able to bring such an iconic brand such as Dixie Beer back where it belongs makes it that much more exciting.”

Canada, ON: Ontario government to offer incentives to brewers selling beer for C$1
|
The Ontario government says it will offer “non-financial incentives” to brewers who sell their beer for C$1 once the province’s buck-a-beer plan is in place later this month, The Financial Post reported.
Premier Doug Ford says participating businesses will be offered prime spots in Liquor Control Board of Ontario stores, or advertising in flyers or inserts, among other possible rewards.
Speaking at a brewery in Picton, Ont., on August 7, the premier said the program, which was one of his promises during the spring election campaign, will not cost taxpayers anything.
“Nobody is being forced to lower their prices and there will be no subsidies or tax handouts,” Ford said, calling the move a “win-win.”
Asked whether he was concerned that cheaper beer might contribute to substance abuse and other harms, Ford said he trusts Ontario consumers to make smart choices when it comes to alcohol, regardless of the lower price.
“If beer goes up in consumption over what — 20 cents, 25 cents? We’re just trying to put money back in the consumer’s pocket,” he said. “I think people in Ontario are mature enough … to know when they’ve had one too many.”

USA: MillerCoors ceases production of Two Hats after just six months
|
After just six months, MillerCoors has pulled the plug on Two Hats, a light beer brand that was targeted at 21- to 24-year-old consumers, Brewbound reported on August 7.
The company announced the decision to cease production of the beer, which will remain on retail shelves until early 2019, in a letter to employees and wholesalers on August 6.
The news comes less than a week after Molson Coors Brewing Company, reported second-quarter U.S. revenue and depletions declines of 3.1 percent and 4.8 percent, respectively. During a call with investors and analysts, Molson Coors executives discussed negative Coors Light trends, which ultimately factored into the decision to eliminate the Two Hats brand, according to MillerCoors vice president of national craft and innovation, Bryan Ferschinger, and president of sales and distributor operations Kevin Doyle.
“[R]ight now we simply cannot get to profitable growth without significant improvement in Coors Light and without gaining a bigger piece of above premium,” they wrote in a memo. “Therefore, we need to focus resources against Coors Light, further build momentum on Miller Lite, and foster our above-premium brands like Arnold Palmer Spiked and Sol.”

Canada & Saudi Arabia: Saudi Arabia stops buying Canadian wheat, barley
|
Saudi Arabia’s main state wheat buying agency has told grains exporters it will no longer buy Canadian wheat and barley in its international tenders, European traders said on August 7, as a diplomatic dispute between the two countries escalates, Reuters reports.
Traders said they had received an official notice from the Saudi Grains Organization (SAGO) about its decision.
Canada on August 6 refused to back down in its defense of human rights after Saudi Arabia froze new trade and investment and expelled the Canadian ambassador in retaliation for Ottawa’s call to free arrested Saudi civil society activists.
“As of Tuesday August 7, 2018, Saudi Grains Organization (SAGO) can no longer accept milling wheat or feed barley cargoes of Canadian origin to be supplied,” a copy of the notice seen by Reuters said.
One European trader said it was not clear if the decision involved only new purchases or delivery of previously agreed contracts. “But I would not deliver Canadian grains to Saudi Arabia now, even on previous contracts,” the trader added.
Another trader said: “This is to me clearly part of the diplomatic dispute between Saudi Arabia and Canada, there is no other reason.”
Winnipeg-based grain trader G3 said it was continuing with business as normal.

Cameroon: Société anonyme des brasseries du Cameroon reports 65.6% decline in net revenue in fiscal 2017

Société anonyme des brasseries du Cameroon (SABC), local subsidiary of Castel group, informs that in the 2017 fiscal year its net result was CFA21.93 billion up by 65.6% from the CFA13.25 billion in 2016, the Business in Cameroon reported on August 3.
SABC said this performance was achieved despite the complex operating environment and the continuous tax burden. The company explained that the economic crisis reduced households' purchasing power and fraudulent beer imports (from neighbouring countries) led to unfair competition in the market.
The company's exports sales dropped by 9.9% during the period under review.
As far as the tax burden is concerned, the brewery informs that, “despite a decrease of the taxes paid, their average burden in the group's operating cost was above 64% during 2015-2017 against an average of 45% between 2011 and 2014".
By December 31, 2017, SABC's turnover was CFA334.9 billion, down by 1% on a year on year basis.

South Africa: Scotch Whisky Association registers 'Scotch' as certification trademark in South Africa
|
The Scotch Whisky Association has successfully registered 'Scotch' as a certification trademark in South Africa, the Insider reported on August 6.
The move is a huge boost to malt exports as South Africa is the seventh largest whisky market by volume.
According to the association, exports to the African nation increased by more than 20 per cent in 2017 with nearly 100 bottles shipped every minute - and exports earning the UK £139 every second.
The SWA said the legal protection of Scotch was vital to the industry's continued export success - with South Africa joining more than 100 other countries where Scotch has been granted legal protection.
SWA chief executive Karen Betts said: "The registration of the ‘Scotch Whisky’ certification trademark in South Africa is a milestone for Scotland’s national drink in our largest export market in Africa, and one of the largest in the world.
“This registration offers Scotch Whisky a greater degree of legal protection and will allow us to prosecute rogue traders who seek to cash-in on the heritage, craft and quality of genuine Scotch.
