HOW HOPS AND YEAST INTERACT

ABSTRACT
This is a large research field and studies to look into it are only starting. Our Team looked into hop aroma of dry hopped beers using two different yeast strains (Califorina Ale and German Koelsch yeasts) and two different hop varieties (US Cascade and Hallertau MittelfrUEh). Dry hopping was done on an equal hop oil equivalent (4ml/hl) after 3 days of fermentation. Our results show that hops are a main source of 3MH although malt also delivers this thiol into beer. The concentration of 4MMP was mainly dependent on the hop variety. Beers brewed with Cascade showed a concentration whereas beers brewed with Hallertau Mittelfrueh or unhopped beers had lower concentrations or no 4MMP was detected. The results suggest that the California Ale Yeast has a higher ability to release monoterpene alcohols from precursors. The California Ale beer with Cascade had higher levels of geraniol and citronellol and was described as more citrusy, The higher levels of 4MMP in the beers made with Cascade hops also showed higher intensities for "red berries" in the sensory profiling. Our results show that hop variety has a stronger influence than yeast on the levels of 4MMP. Higher levels of linalool in beers made with HHA also match the sensory description of more intense floral flavour.

Brewery news World: Diageo announces first tranche of buyback programme
Diageo said on August 10 it had entered into an agreement with Citigroup to execute the first tranche of the company's buyback programme, the Shares Magazine reported.

The agreement commenced on August 10 and is expected to end no later than 31 January 2019, Diageo said.

Diageo will buy back about £1.4 bln of shares, and further tranches are expected to be announced during the financial year ending 30 June 2019.


Brewery news Latvia: Cesu Alus brewery’s turnover increases 14.7%
Latvia’s Cesu Alus brewery turned over 54.267 mln in 2017, up 14.7% against a year before, while its profit nearly doubled to EUR 5.516 mln, informs LETA.

The company’s beer sales rose 13.5% year-on-year to 76.3 mln litres in 2017, Cesu Alus management said, adding that growth was recorded in all beverages segments, with the sales of fermented beverages, water and non-alcoholic beverages growing at the fastest pace.

According to the company’s management, Cesu Alus accounted for 68% of Latvia’s total beer output last year.

In 2017, the brewery’s energy management system was certified to ISO 50001 and the company continued to implement its long-term investment program, spending EUR 1.67 mln on production upgrades.

In 2016, Cesu Alus generated EUR 47.314 mln in turnover and made a EUR 2.785 mln profit.

With a 99% stake in the company’s capital Finland’s Olvi is the key owner of Cesu Alus.



Brewery news Australia: Brewers Association calling Tax Office for heavy taxes on beer
Australia’s Brewers Association is calling out the Australian Tax Office for its heavy taxes on beer as increases are expected this month, the Food & Drink Business reported on August 9.

“The latest 2016-17 data on beer and taxes is sobering,” Brewers Association of Australia CEO Brett Heffernan said.

“Despite beer being by far the lowest concentration of all alcohol products, beer excise netted the Australian government the biggest return of A$2.38 billion."

Heffernan said Australian beer excises ranked among the highest in the world despite per capita consumption of beer falling 60 per cent over the last four decades, and the excise automatically goes up every February and August.

He said there was also a GST of 10 per cent on the excise, and another 10 per cent GST is paid on the wholesale price.

“All told, that’s a tax trifecta worth a whopping A$4.2 billion in just one year, just from beer,” Heffernan said.

The Wine Equalisation Tax (WET) saw A$850 million collected from wine in 2016-17, with no increase in the WET since it was introduced almost 20 years ago.

“It’s beer drinkers who are paying the most in alcohol tax despite imbibing a fraction of the alcohol,” he said.
