ALL ABOUT ALPHA ACID ISOMERIZATION
ABSTRACT
Dedicated to Dr. Koen Goiris, who passed away in 2017,
a Belgium research group published an extensive
overview about everything there is to know about alpha
acid and its isomerization. From the biosynthesis of bitter
acids in the hop plant, the solubility properties of alpha
acids in wort and beer, to the reaction mechanisms and
kinetics of converting alpha acids into iso alpha acids —
all relevant research and publications are summarized
here. And as the authors say and I agree "this review
paper will help scientists to find their way and discover
new things in the fascinating field of hop research."

USA, CT: Stratford's Two Roads Brewing Company to open $15 million expansion Area Two Experimental Brewing on March 11
|
The wait is almost over. Stratford's Two Roads Brewing Company will open its $15 million expansion, called Area Two Experimental Brewing, in a state-of-the-art 25,000 square foot facility on March 11. Area Two will be entirely focused on sour, barrel-aged and experimental beers, Patch.com reported on February 27.
According to Master Brewer and co-founder, Phil Markowski, "Area Two will be a brewery of boundless experimentation," meaning that "we will continue to innovate, redefine and stretch the definition of beer." Included at Area Two will be barrel-aged, lambic-style sour beers, beers aged in barrels obtained from distilleries, wineries and other sources as well as beers spontaneously fermented from local, airborne yeast. Beer will also age in large wooden tanks known as "foudres" for as long as two years to deliver unique characteristics found in these highly complex beers.
The showcase of the souring operation will be Area Two's coolship; a large, shallow steel pan housed in a separate building facing the property's wetlands preserve. The wetlands will be a rich source of local microflora which will be introduced to the fermenting beer as it rests in the coolship. This process, called "spontaneous fermentation," is behind some of the world's most renowned sour beers

USA, OR: Vagabond Brewing up and pouring at its fourth location in Southeast Portland
|
Vagabond Brewing, founded by three friends and Marine veterans who traveled the globe looking for adventure and purpose, is up and pouring in close-in Southeast Portland, the fourth location for the Salem-based brewery, OregonLive.com reported on February 28.
Opened recently in a former Darigold dairy building in the Hosford-Abernethy neighborhood, Vagabond charges headfirst into an area rich in breweries, including nearby Grixsen, Baerlic and Ground Breaker.
The brainchild of longtime friends James Cardwell, Alvin Klausen and Dean Howes, Vagabond first opened a taproom in a Salem industrial space five years ago. It proved so popular it quickly expanded production and opened two more locations in the Salem area.
The three friends, all of whom are combat veterans, settled on the idea of starting a brewery after serving in the Marines then touring the world. They say they “went looking for meaning and purpose and found love, adventure, and the essence of the human experience.”
The trio says everywhere they went, they also found beer, and that beer “brought people together and was an almost universal language that easily broke the ice or sparked conversations lasting well into the night.”
Thus, Vagabond was born. The founders say they are opening in Portland because they want to

USA, VA: Old Rappahannock Brewing Company to open new production facility in Warsaw, VA
|
Old Rappahannock Brewing Company will create 11 new jobs and invest over $1.2 million to open a new production facility and tasting room in the Town of Warsaw, the Augusta Free Press reported on February 27.
The company will source more than 90 percent of the hops, wheat, oysters, and fruit used in its brews from Virginia. Old Rappahannock Brewing will be the first craft brewery in Richmond County and only the third in the region, creating an important new amenity for year-round residents and tourists.
“Old Rappahannock Brewing Company’s investment and job creation in the Town of Warsaw represents a tremendous opportunity to create new markets for Virginia’s watermen and farmers as craft beverage producers work with them to source the Virginia oysters, wheat, hops, and other items that make their products so distinctive,” said Governor Northam. “This announcement is a significant win that will yield benefits for all of rural coastal Virginia and the thriving craft beverage and tourism industries in our Commonwealth.”
“The Town of Warsaw was built upon the success of farming and fishing in the region. So it is fitting that those cornerstone industries, along with Virginia’s burgeoning craft beverage industry, are also part of town’s revitalization,” said

USA, WI: Good City Brewing opens in Kilbourn Town, Milwaukee
|
A new brewery has opened at 333 W. Juneau Ave. in Kilbourn Town, Milwaukee: the fresh arrival is called Good City Brewing, Hoodline reported on February 27.
The downtown spot is the second location for the brewery to open in Wisconsin. Good City Brewing seats 200 people in the first-floor taproom while the outdoor patio seats 360 people on the second floor. Choose from a menu of various food options and beers on tap. Pair the beer with a brat burger, made of Miesfelds of Shebaygan’s brat patty with cheddar cheese, spicy beer mustard and a sport pepper relish.
Good City Brewing Downtown has proven popular thus far, with a 4.5-star rating out of three reviews on Yelp.
Jenny B., who was the first Yelper to review the new spot on Feb. 9, wrote, "So happy they opened a location downtown! This is the perfect place to stop at before a Buck's game or really whenever. They have so many more beer options than the Farwell location."
Yelper Marissa M. added, "My co-workers and I came on opening weekend and we were very satisfied with the place. The food was great! We shared pizza, a pretzel roll and macaroni and cheese — it was

USA, DE: Brown Brothers Brewing hoping to start brewing in Dagsboro soon
|
Sometime this fall, business could literally be brewing in Dagsboro’s Savannah Square Shopping Center.
Pending an amendment to town code and brewery licensing, Ocean View resident Zack Brown hopes to be serving the likes of Electric Circus IPA and other craft beers with homegrown catchy names in a nanobrewery small-batch business endeavor spiced with brotherly love.
“We just have a dream to start a craft brewing business,” said Mr. Brown, speaking on behalf his brothers, Ronnie and Nick, and Brown Brothers Brewing at the Feb. 25 Dagsboro town council meeting. “We really love the location in Savannah Square. We like the accessibility and overall appearance. I believe based on it being a great location that it would be a great place to have a brewery and bring in new business for the town.”
“We’ve been brewing beer together. We are all craft beer enthusiasts and it’s time now we put our hobby into a business,” said Mr. Brown.
Dagsboro’s town council is addressing the request from Brown Brothers Brewing. It will require a change in code that would include language allowing craft beer business as a permitted use in the highway commercial zoning district. Under current code, that use is not permitted.
Kyle Gulbronson, Dagsboro’s

USA, IL: The Well at the Distillery opens at former Thornton 1857 brewery location
|
The Well at the Distillery is the South Suburbs' newest distillery, but it’s not the first time alcohol has been produced in its Thornton location, The Homewood-Flossmoor Chronicle reported on February 28.
The business at 400 E. Margaret St. is producing craft gin, vodka, whiskey and rum in the same spot where beer was brewed for a century. The distillery sits along Thorn Creek in a spot that was inhabited by Native Americans until being sold to fur traders. It was 1857 when John Biefeldt found it an ideal location for beer brewing due to the water source and natural spring.
That water source continues to provide an ideal spot for making spirits with a limestone-filtered artisan well.
Except for a brief period during Prohibition, the brewery remained in operation until 1957. And even during Prohibition, when the site became a soda manufacturer, the beer was quietly brewed and distributed by some of the era’s most notorious Chicago gangsters, including Al Capone.
After the beer brewing ceased, the building had various uses, from light industrial operations in one portion and taverns and restaurants in another part. It sat vacant for many years before restoration began four years ago. Not only is it one

USA: Heineken to cut US workforce by 15%
|
The US division of beer giant Heineken has announced that it will be cutting its workforce by 15%, stating that the restructuring would “enable more efficient ways of working”, The Drinks Business reported on February 28.
As reported by Brewbound, spokesperson for Heineken USA, Bjorn Trowery, confirmed in a statement that the company was making job cuts.
He said: “We are modifying our sales team structure to align with our strategy and to enable more efficient ways of working.
“This will help Heineken USA be more cost effective, and allow us to reinvest behind our brands and business in the US. While change that impacts our people is always difficult, we believe these changes will better position Heineken USA for the future.”
Trowery also told the news site that Heineken was “actively” seeking “new opportunities” for those members of staff who are losing their roles.
In October last year, Heineken-owned brewer Lagunitas made over 100 employees redundant –12% of its workforce – in the wake of what it called a rapidly evolving and “more challenging” market.
Other big beer companies to have made cuts in recent months include AB InBev, MillerCoors, Constellation Brands and Pabst Brewing. Constellation Brands also recently confirmed rumours that will sell or

The new Black Eagle Stout contains 8.8 percent alcohol by volume, giving it a smooth bitter and sweet aftertaste, Carlsberg said.
