THE POTENTIAL IN DRY HOPPING
ABSTRACT
The different growing regions of hop production also
use different techniques for hop drying after harvest.
This US Team did a comparison of different kilning
procedures. In the US the traditional hop method is to
pile them 60-80 cm in large boxes and to run through
the beds with air heated to 48-66 degrees C. This can result
in uneven drying with bottom hops having 5% moisture
and the hops at the top having up to 20% moisture.
Overheating the hops can result in the formation of off
flavours like onion/garlic. In comparison, drying hops
with unheated and dehumidified air results in a less
than 1% moisture difference between top and bottom
of the bed. However this system is energy intensive
and takes up to 48hrs in comparison to up to 13 hrs
for the traditional method. The system in Germany/
Europe consists of using three drawers of hops with a
height of 30 cm each that are dried and then dropped
to the second tier as a new load of hops is loaded into
the top tier. Again, after partial drying the middle tier
is dropped to the lowest tier, the top tier to the middle,
and the top once again reloaded. This system results in
very homogenous moisture levels but in terms of energy
consumption appears to be slightly above the US system. This study thoroughly compares all three systems
in terms of energy consumption showing all pros and
cons in terms of hops quality. Obviously for all systems
there is still room for improvement.

USA, MI: Third Nature Brewing Co. set to hold grand opening on October 28
|
A new brewery in the area is embracing the great outdoors, GR MAG reported on October 17.
Third Nature Brewing Co., a rustic brewery and taproom in Plainfield Township, is set to have its grand opening on Oct. 28, the co-owners have announced.
Third Nature sits on 7.5 acres at 7733 Childsdale Ave. NE, in good proximity to both the Rogue River and White Pine Trail.
The taproom will have 12 to 15 beers on tap, including specialty and seasonal rotations.
The food menu will feature standard “comfort foods” like pizzas and hot sandwiches, as well as healthier options like power bowls and salads.
The co-owners — Rockford natives and brothers Troy Zitzelsberger and Chad Zitzelsberger and their brother-in-law Bryce Roebke — received the green light for the plan back in April.
They are avid runners and bikers, and the goal of Third Nature is to be a haven for outdoor enthusiasts like them, Chad Zitzelsberger said previously.
Troy Zitzelsberger is a certified cicerone. He is also the former owner of Hop Mori Brewing Company in Seoul, South Korea, which he closed to start Third Nature with his family.
The architect on the project was Progressive AE, and Caledonia-based Pel Construction served as the general contractor.

USA, IL: Kishwaukee Brewery planning new brewery in Woodstock by next summer
|
A Crystal Lake brewer plans to open his own brewery in Woodstock, the Northwest Herald reported on October 19.
Dan Payson has been working in the brewing industry for a decade and is close to realizing his dream of owning his own facility.
The Woodstock City Council recently approved a liquor license for Kishwaukee Brewery Inc. Payson said he expects to break ground on the 10,000-square-foot facility by November and open by next summer.
A former architect, Payson decided to make a career change about 10 years ago with the goal of opening his own brewery.
“I told myself if I was going to make such a change, I would open my own brewery,” Payson said. “It’s been a long process, but it’s finally coming to fruition.”
He has worked in Seattle, at Scorched Earth Brewing in Algonquin and at Crystal Lake Brewing.
Kishwaukee Brewery Inc. will have 7,500 square feet of production space, with the remainder of the facility dedicated to a taproom. An outdoor beer garden will offer additional seating, Payson said.
He plans to sell Kishwaukee Brewery beer to stores, at the brewery itself and in the taproom for on-premise consumption.
“It will be primarily on premise for the first year, and we will have

USA, NY: Evil Twin Brewing already open in Ridgewood
|
Jeppe Jarnit-Bjergsø – along with his wife and business partner, Maria – open the doors to their very first permanent brewery and taproom – Evil Twin Brewing New York City – in Ridgewood, Queens. With a place to finally call “home,” the pair is excited to have the opportunity to perfect the classics and expand upon Evil Twin’s traditions of innovation through thoughtful experimentation and collaboration, Brewbound reported on October 19.
Jeppe Jarnit-Bjergsø, one of the biggest names in craft brewing, founded Evil Twin Brewing in 2010 as a “nomadic” brewery. Over the past nine years, his gypsy-brewed beers have received wide acclaim both domestically and internationally, garnering countless awards and earning their way onto the menus of the world’s best restaurants. The brand will continue to operate its large-scale production and distribution, which currently exports to over 35 countries around the globe, and 35 states across the country.
“There are no rules in beer – we create our recipes with the intention of changing them,” says Jeppe. “Our close relationships with chefs and restaurants serve as a daily inspiration to us. Building a composed dish is much like a brewing a new beer – you taste and you tweak, you experiment

USA, PA: Invisible Man Brewing holds soft opening in Greensburg
|
Two back-to-back business openings have brought new energy to a block on Greensburg’s South Pennsylvania Avenue, TribLIVE reported on October 17.
Wight Elephant Boutique held its grand opening on October 17, a major milestone for the developers who have spent more than $1 million renovating the long-vacant building at 136 S. Pennsylvania Ave.
“I’m not an emotional person, but I’ve been super emotional on this project, seeing the building transform and seeing the whole town come together,” said Suzanne Ward, co-owner of developer CityCribs.
Next door, Invisible Man Brewing held a soft opening on October 16, with plans for a more formal grand opening next week.
“I think it’s a really fun place to be, and I’m just looking forward to that energy,” co-owner Sean McLaughlin said.
Wight Elephant is the first tenant at 136. The rest of the 16,000-square-foot building is still undergoing extensive renovations.
Once work is done later this year, the Downtown Greensburg Project will move into offices next to the boutique.
The Trendy Bunny baby boutique will open downstairs, while the upper floors will become apartments.
Ward said she’s pleasantly surprised by how quickly CityCribs has been able to find commercial tenants.
Wight Elephant is a family business, owner Victoria Piekut said. She has fashion

USA, CA: Mad River Brewing Company acquired by California’s largest tribe
|
California's largest tribe is buying one of Humboldt county's beloved small town breweries, KRCRTV.com reported on October 17.
The Yurok Agricultural Corporation announced the signing of an agreement to purchase the Mad River Brewing Company, Tap Room and family-friendly restaurant for its traditional brewing methods and environmentally-friendly methods of waste reduction.
The small Humboldt craft brewery tucked away in Blue Lake, California is celebrating its 30 year anniversary this year. Mad River Brewery CEO Richard Hanger said he is looking forward to brewing with passion for another 30 years under new ownership.
"Mad River Brewing Company has been brewing quality craft beer since 1989," Hanger said. "Under this new ownership we will modernize our plant and develop new markets while maintaining the important relationships we have developed with our employees and the community."
Mad River Brewery has won seven of the California Integrated Waste Management Board's Waste Reduction Awards. The brewery has a 98% waste reduction rate with most of the organic waste, ten tons of spent barley malt and yeast a year used as feed to local livestock, or used as composting material.
“This perfectly aligns with the Yurok Agriculture Corporation’s vision of holistic business operations, and the Yurok Tribe’s dedication to its role

USA, CO: Peculierales brewpub aiming at spring opening
|
The third and last commercial space at the historic Windsor Mill will be filled by a brewpub with a peculiar name, The Coloradoan reported on October 18.
Greeley brewer Nick Armitage plans to open Peculierales — pronounced "peculiar ales" — next spring at the newly rebuilt Windsor Mill, 301 Main St.
Windsor Mill Tavern opened nearly three weeks ago, followed by Cacciatore at Heller's Kitchen on Oct. 11. Customers will have to wait a few more months before Peculierales opens as Armitage completes the million-dollar interior renovation.
The addition of Peculierales brings the mill back to its former glory after suffering through a tornado and catastrophic arson fire.
"It's the final piece to the puzzle to make the trifecta within there, and it will hopefully be successful," said Stacy Miller, Windsor's economic development director.
Peculierales will be the town's fourth brewpub, joining High Hops Brewery, Mash Lab Brewing and Mighty River Brewing Co.
Armitage brings almost a decade of brewing experience to his own venture. After going back to school for a degree in industrial chemical and brewery science at University of Northern Colorado in Greeley, he interned at New Belgium Brewing Co. and worked for WeldWerks

USA, CA: Bear Republic Brewing Company closing down original brewpub location in Healdsburg
|
After nearly 25 years in operation, Bear Republic Brewing Company will close its original brewpub location in Healdsburg, the company confirms. Its other two locations, a main brewhouse in Cloverdale and a brewpub in Rohnert Park, will remain open, SEGate reported on October 18.
On October 18, the brewery posted news of the November 22 closure on Facebook, writing, "We’ve brewed award-winning beers, witnessed weddings, watched families grow and made countless friends in Healdsburg. We’ll never forget where Bear Republic Brewing Company was born."
The Norgrove family opened the small brewery-restaurant in 1995 in Healdsburg's downtown square. But in recent years, says CEO Ricardo Norgrove, the brewpub's building has required construction projects that Norgrove says the building's landlord should cover. After trying to renegotiate for the leasehold improvements for a year, he says, he realized it was "time to pull the plug and close."
Business is great, particularly in Rohnert Park, Norgrove says, but for it to continue growing, the company needed to make a change. "The long and skinny is I can't keep rebuilding someone’s buildings," he tells SFGATE.
Norgrove says the brewpub building's woes are indicative of a larger problem in Healdsburg. The cost of business has gone up, and the town's

India: Investigation concludes AB InBev, Carlsberg and UB colluded to fix beer prices - sources
|
The investigations unit of India’s Competition Commission has concluded that Anheuser-Busch InBev, Carlsberg and United Breweries colluded to fix beer prices, two people with direct knowledge told Reuters.
The Competition Commission of India (CCI) launched the investigation after AB InBev told the watchdog it had detected an industry cartel, leading in 2018 to dawn raids at the three brewers’ offices to collect evidence.
The investigation has found that 15-20 executives from the three brewers were involved in discussions of beer prices before they were submitted to Indian state regulators, thereby violating antitrust laws, said the two sources, who declined to be named as the report is not public.
“The evidence seized by the CCI during searches last year was enough to nail the culprits,” said one of the sources.
AB InBev, the world’s largest brewer, whose Indian offerings include Budweiser and Corona, told Reuters it would not be appropriate to comment at this time, but said it takes antitrust compliance “very seriously”.
Carlsberg, which sells beer under its own-name brand and also owns Tuborg, declined to comment on Friday, but has previously said it is “committed to complying” with all relevant laws.
United Breweries, which is part-owned by Heineken and known for its Kingfisher brand, said

Australia: State of Victoria launches programme to support small-scale and craft beer producers
|
The Government of Victoria in Australia has launched a programme to support small-scale and craft beer producers in the state to expand their business, The Drinks Insight Network reported on October 23.
Through the initiative, the government aims to encourage craft producers in the state to increase the production capacity to create employment opportunities.
The Victoria Minister for Agriculture, Jaclyn Symes, launched the A$10 mln (US$6.8 mln) Small-Scale and Craft Program during her visit to King River Brewing in Whitfield.
The launch of the programme follows the Artisanal Sector Program, whereby government provided grants to Victoria’s highly valued and diverse artisanal produce sector.
Under the programme, King River Brewing received A$5,000 (US$3,420) to enclose the brewery and install a climate control system to enable year-round manufacturing of its beers.
The brewery is engaged in the production of small-batch and preservative-free boutique beer.
It produces a wide range of beers including Kolsch, Pale Ale, Belgian Tripel and Doppelbock, as well as seasonal beers such as the Fig Porter.
Symes said: “Victoria’s small-scale and craft producers have enormous potential to take the state’s phenomenal produce to the world. We’re backing their expansions, job creation and new products.
“If you’re one of Victoria’s unique, small-scale food, craft beer or spirit producers,

Japan: Kirin to launch non-alcoholic beer with Food with Functional Claim
|
Kirin is preparing to launch its non-alcoholic beer with a Food with Functional Claim (FFC) label in Japan, BeverageDaily.com reported on October 24.
The beer, Kirin Karada Free, contains matured hop extract (S-Ignite) which the firm claims to help reduce abdominal fat.
Toshiaki Hyodo from the corporate communication at Kirin Holdings told NutraIngredients-Asia that there was an increasing awareness in health and moderate exercise, “and consumers are looking to obtain (health) benefits from drinking beverages.”
He said this had contributed to the share of functional beer market in Japan.
Hops extract powder is made from maturing hops, which not only reduces the bitterness, but also increases the amount of matured hop bitter acids, which are the active component for fat burn.
S-ignite works is by activating brown adipose tissue (BAT) rapidly via the sympathetic nerves. Activated BAT reduces body fat by acting as a metabolic furnace that uses the fat stored in white adipose tissue as fuel.
The firm said activated BAT is the key to continuously burning body fat, and eventually, reducing abdominal fat.
In a clinical trial conducted in 2016 by Morimoto-Kobayashi et al., 200 healthy but overweight (25≤BMI<30) Japanese males and females were recruited.
They were divided into two groups and told to consume a
