NO OXYGEN WITH HIGH TEMPERATURES PLEASE!
ABSTRACT
We have to breathe and to sweat to live but beer
doesn't and shouldn't. Intensive research has been
carried out to identify the staling mechanisms in lager
beers. However, the impact of dissolved oxygen on
dry-hopped beers is poorly investigated. US
researchers evaluated the impact of dissolved oxygen on the sensory and hop volatile profiles of dry-hopped
beer during storage. Commercially-brewed dry-hopped
beer was dosed with oxygen in a controlled fashion
to create beers with a range of dissolved oxygen
concentrations from approximately 40 to 250 mg/L and
then stored under chilled or accelerated storage conditions.
Sensory results identified storage temperature as having the
greatest effect on aroma during storage. Dissolved oxygen
concentration was observed to have a lesser, but significant,
impact at both high and low storage temperatures after
only two weeks of aging. Higher temperature and dissolved
oxygen concentrations resulted in decreased tropical, citrus,
and hoppy characteristics and the expression of malty, dried
fruit, and cardboard aromas. However, by chemical analysis
it was observed that hop-derived monoterpenes were not
significantly affected by treatment temperature or dissolved
oxygen, suggesting that the stale character expression
comes from alternate sources such as lipid oxidation or
Strecker aldehyde formation.

Japan: All four leading brewers see sales drop in November
|
Four major Japanese brewers saw their domestic sales of beer and beer-like products fall by between 3 pct and 7 pct in volume in November from a year before, their data showed on December 11.
There was a lingering impact from the Oct. 1 consumption tax increase, but the size of the sales declines was smaller than in October.
Kirin Brewery Co. posted a sales drop of 7 pct. Sales by Asahi Breweries Ltd. decreased 6 pct. Sapporo Breweries Ltd.'s sales fell 5 pct. Suntory Beer Ltd. had a 3 pct sales decline.
Sales of mainstay brands remained particularly weak apparently because consumers stocked them up before the tax was raised from 8 pct to 10 pct.
But the breweries see the impact of the tax increase milder than that seen when the tax was previously raised in April 2014, from 5 pct to 8 pct. "Sales have not been bad in December," a company official said.

Kenya: Danish Brewing Company to set up operations at Naivasha Industrial Park
|
Danish Brewing Company E.A Limited, a subsidiary of Bounty Global Management DWC LLC is set to be the first anchor tenant at the Naivasha Industrial Park, The Star, Kenya reported on December 11.
The beer maker has set aside $45 million (Sh4.59 billion) to set up its operations in the country.
More than 100 local and international investors have so far expressed interest in setting up shop at the planned industrial park.
The brewer of Tuborg, Carlsberg, Holsten, and Kronenbourg beers, as well as Somersby Cider, plans to set up a plant with a production capacity of 12-15 million cases of beer annually.
The firm will also employ 350 Kenyans and produce beverages using sorghum sourced locally from their recently launched Farmers Outreach Programme, expecting to contract 17,000 farmers.
Trade CS Peter Munya on December 10 said support given by government has created an enabling environment in turn attracting a number of local and international private investors.
"As our Government believes in public-private partnership we are working hand-in-hand to realise the goals of the Manufacturing pillar of the Big 4 Agenda," he said.

India: United Breweries to drop its oldest global distributor
|
United Breweries, the maker of Heineken beer, will drop its oldest global distributor, Ultimate Branding Worldwide. The move comes in the wake of investigations by the Enforcement Directorate (ED) into a possible nexus with the former liquor baron Vijay Mallya following a whistle-blower complaint, the Economic Times reported on December 12.
The company will start exporting directly with the aid of its parent Heineken’s global distribution network, officials close to the development said.
According to sources, ED is investigating at least five companies in India and overseas for their alleged association with embattled liquor baron Vijay Mallya. The probe hasn’t so far found evidence to prove money was laundered to fund Mallya’s case. The ED is investigating if these were ‘dummy companies’ that were allegedly controlled by Mallya and profits accrued were used to fund his legal expenses.
“The ED officials have not got back to us on any further developments. We offered them as much information as they sought to investigate into the matter. But going ahead, we will build our own direct distribution into overseas markets with the support of Heineken,” a spokesperson for united Breweries, said.

Kenya: East African Breweries expects 10% rise in local barley supply this year

East African Breweries Ltd (EABL) is expecting to receive 47,000 metric tonnes of barley this year following improved production, the Business Daily reported on December 11.
The brewer said production had increased 10 percent in Narok North sub-county.
Speaking at the launch of the 8th edition of the Barley Growing Handbook during the annual field day in Mau Narok on December 11, East Africa Maltings Ltd (EAML) general manager Lawrence Maina said improved barley varieties launched recently had resulted in the higher output.
However, Kenya Barley Growers Association Chairman David ole Kilesi expressed fear that heavy rain might affect harvesting.
“We are late for harvesting for the last two weeks due to the rains, and the ripe crop is not turning black due to waterlogging in the fields. We are not sure we will reach the EABL threshold,” said Mr Kilesi.
However, Mr Maina said a variety launched three years ago in partnership with the University of Eldoret at the Sansora farm in Mau Narok, Nakuru and KWS Aliciana would offer quality malting and brewing. It also produces many stems from one seed, increasing the yield for farmers, he said.
