Stabilize your bitterness by dry-hopping

ABSTRACT
It is well known that the bitter substances in beer undergo different degradation processes over time once bottled. However, there is not much data on the stability of bitter substances in dry-hopped beers available. A new study investigated the stability of various bitter compounds in a lager type beer that was late and dry-hopped. The brewed beers were stored for two years at 4 °C, 22 °C and 30 °C. The aging of the beers stored at 4 °C resulted only in minor changes. The beers stored at warm temperatures confirmed the high susceptibility of trans-iso-alpha acids versus the cis version to degradation (up to 8 times higher). The interesting result was found in the dry-hopped lager: all of the bitter substances in the dry-hopped beers showed less degradation due to ageing than those in the late-hopped beers. Whether the higher stability of the bitter substances in dry-hopped beer can be attributed to the changes in its composition through the addition of dry-hops was not clearly established. Additional polyphenols may play a beneficial role in this context.

Hops news USA: Commercial hop acreage up 3.37% but total production falls below 2019 crop
Commercial U.S. hop acreage increased another 3.73% in 2020, although total production fell below the 2019 crop by 7.29%, the Hop Growers of America said in their latest report published on January 25.

Citra®, HBC 394 widened its lead as the US hop acreage leader, while CTZ retained the #2 spot. Cascade fell to fifth place as Mosaic®, HBC 369 and Simcoe ®, YCR 14 took over the third and fourth place slots. Proprietary hop varieties now account for six of the top ten acreage slots.

Average yields in the Pacific Northwest fell to 1,770 pounds per acre due to severe weather challenges and heavy smoke cover during harvest, while most production regions outside of the PNW experienced average or better yields. Washington was hardest hit with a 12.56% yield reduction from 2019, followed by Idaho with 8.8% lower yields than last year. Brewery news USA, OH: BrewDog USA to launch craft brewery and pub in New Albany
New Albany is getting a downtown craft brewery and pub – just not the one first planned, the Columbus Business First reported on February 5.

BrewDog USA will take over the former New Albany Mill building at 97 W. Granville St.

That almost 8,700-square-foot space – split between 6,990 square feet indoor and a 1,645-square-foot covered patio – originally was tabbed to be a combination Harvest Pizzeria and Three Tigers Brewing brewpub, but the Covid-19 pandemic curbed that plan.

Three Tigers since has decided to expand in downtown Granville.

Meanwhile, BrewDog said it could fill that opening in New Albany. It expects to open in spring or summer.

The company said on February 4 that the outdoor space will include fire pits and outdoor games. Inside plans include interior fire pits, an interactive beer school and 24 taps featuring BrewDog beer and brews from around the world.

BrewDog said it wanted to “plant a flag” on the north side of Columbus for customers who might feel they’re too far from the Canal Winchester mothership or the bars in the Short North or Franklinton. It cited the fast-developing area, the supportive local community and an “iconic” space as part of the lure to the project.

Brewery news USA, AR: Owner of Fort Smith Brewing Company to open microbrewery in Van Buren
Quentin Willard, the owner of Fort Smith Brewing Company, is planning on opening a microbrewery in downtown Van Buren. The brewery will be named Pointer Place and Willard is hoping to open in mid-May, the Van Buren Press Argus-Courier reported on February 8.

Willard is a Van Buren native and graduated from Van Buren High School. Before his career in brewing, Willard attended the United States Military Academy and graduated as a 2nd Lt. Field Artillery Officer in 2007.

Willard is currently waiting on permits from the state before he can begin setting up the Van Buren brewery. Pointer Place will be the first of its kind in Van Buren and located at 621 Main St. in Van Buren.

"Being a dry county, it definitely makes it more difficult," said Willard. Since Crawford County is a dry county, Pointer Place will be a microbrewery.

Because of this, the beer will not be packaged but will stay contained within the premises on tap.

The original name was supposed to be Pointer Brewery, but due to dry county laws, they are not allowed to have the word "brewery" in the name.

Brewery news USA, PA: Necromancer Brewing Co. slated to open March 1 in Ross
Necromancer Brewing Co. is slated to open March 1 in Ross. The brewery and future taproom will be located on Babcock Boulevard in a space that formerly housed the USA Baby warehouse and the Spirit Halloween store, Patch.com reported on February 5.

The 14,400 square-foot space is near popular North Hills restaurants such as Silvoni's and Monte Cello's and craft beer mainstays such as Hal's Bottleshop and Babcock Beer.

"Our first priority is to get production up and running so we can begin offering takeaway, door-to-door delivery, and select distribution," the brewery announced in a Facebook post. "The longer-term goal is to build an immersive taproom experience, but with the uncertainty surrounding COVID, we haven't finalized our plan for that yet."

According to Breweries in Pennsylvania, Necromancer will brew three categories of beers: trends, such as Hazy IPAs and fruited sours; familiars, such as pilsners; and resurrections for styles Necromancer plans to bring back.

There will be four primary beers to start: NE IPA, Belgian Wit, Grissette, and a Kentucky Common called Square Dancing.


Brewery news USA: AB InBev to start brewing Stella Artois in the US
Long known as a product of Belgium, premium beer brand Stella Artois will soon lose its “import” status and be manufactured in the United States, as parent company Anheuser-Busch rolls out a major $1 billion, two-year domestic investment across its portfolio that’s aimed at stimulating the American economy, AdAge reported on February 9.

Under the terms of the arrangement, Stella’s bottling will first shift to St. Louis this summer with cans and draught production transitioning before the end of 2021. Four existing Anheuser-Busch breweries are slated for long-term upgrades to handle the increase in volume, with facilities in Los Angeles, Newark and Jacksonville, Fla., joining the company’s St. Louis flagship in taking on the brand’s manufacture.

In addition, AB is set to invest a further $296 million in Stella’s domestic distribution over the next two years.

“Throughout the pandemic, our advanced planning and proactive actions have put our U.S. supply chain in a strong position; however, we are subject to the instability of the international supply chain when it comes to some of our imports,” says Brendan Whitworth, AB’s chief sales officer in the U.S.

Brewery news USA, CT: Spacecat Brewing Co. slated for May opening in South Norwalk
Connecticut’s beer scene continues to expand, even through the COVID-19 pandemic, and another brewery is set to join the options in Fairfield County this spring, Thehour.com reported on February 5.

Spacecat Brewing Co. is slated for a May opening at 57 Chestnut St. in South Norwalk, says founder James Bloom, who signed a lease for the 4,700-square-foot production facility and taproom in the J. & J. Cash mill building last October. The space is three blocks from the South Norwalk Metro-North station.

Bloom was working as a data analyst for Remedy Partners when he formed a friendship with a colleague, Jeff Dunn, an avid homebrewer. As the two homebrewed together, they began talking about someday launching a brewery.

“I was already in this headspace where I wanted to branch out and create a craft business, but I wasn’t sure what that was going to look like yet,” Bloom said. “And it happened quickly. We just went full force into the idea.”

Brewery news USA, IL: Destihl Brewery’s growth not slowed down by pandemic
The pandemic didn’t slow Destihl Brewery’s growth in 2020 and the company is betting on 2021 being an even better year to make and sell beer, WGLT News reported on February 5.

The Normal-based brewery based has announced plans to expand capacity after increasing production by 25% last year.

“While our brewpub/restaurant and beer hall retail operations have been devastated by ongoing mandatory closures of indoor dining and other restrictions in our state, we are looking forward to a great 2021 at wholesale and retail,” co-founder and CEO Matt Potts said in a news release.

According to Destihl, draft beer sales fell 47% last year due to the pandemic-related closing of bars and restaurants, including its brewpub in Normal, and beer hall at the brewery in north Normal. However, the company said Destihl’s packaged beer sales grew 30%, which more than offset the loss in draft beer sales.

The brewery said it’s Wild Sour series that includes Here Gose Nothin,’ Synchopathic and Lynnbrook, led the surge in production at 55% over the previous year's levels.

Destihl plans to add 10,000 barrels of fermentation capacity at the end of March, more automation for its canning line, and the addition of other equipment later this year.


Brewery news USA, MI: Stone Hound Brewing Company waiting for final inspections before opening
In an alternate timeline, Brent Faber would have opened the doors to Stone Hound Brewing Company in Williamsburg nearly a year ago. Faber’s intention for his brand-new Acme-based brewery was to hold a grand opening in April or May of 2020, followed by a busy summer slinging craft beers to locals and tourist crowds alike.

“We definitely didn't hit our anticipated opening date, by any means,” Faber said. “We would have been behind regardless of the pandemic, just with normal construction delays. We were waiting a long time, for instance, for our final prints from our architects. And then once we finally started getting construction going, that’s when last March hit and we lost a solid two months. We couldn't have any contractors in the building at all during that first lockdown period. Then, once we were allowed to resume construction, everybody else was allowed to resume construction, too, so all the tradespeople were facing this backlog of work from those two months.”

Brewery news USA, NY: Peconic County Brewing ready to open its doors in downtown Riverhead
Walking into the new Peconic County Brewing tasting room is awesome in the fullest sense of the word. High ceilings and tall windows let in light, giant bright blue and green murals of octopus and bubbles cover the walls and a huge wooden bar in the back showcases the ten beers on tap, the Riverhead News Review reported on February 6.

This is the brainchild of Jeff Schaeffer, who has been working on the business and the space for almost two years. And he hopes this weekend, pending one remaining permit, Peconic County Brewery will open its doors to the public and be the sixth in Riverhead and one of a dozen on the East End.

All the breweries “do something great,” Schaeffer said. “When people say ‘I’m going to the wineries,’ I want them to say ‘I’m going to the breweries’ too. And I think this is a good destination here because it’s big and unique.”

Brewery news USA, HI: The Hawai‘i State Legislature considers several new taxes on sugar, tobacco products and alcohol
The Hawai‘i State Legislature in 2021 is considering several new taxes on items largely considered to represent human vice, including sugar, tobacco products and alcohol, the Big Island Now reported on February 9.

House Bill 771 proposes a three-year surcharge on the state’s liquor tax without tethering itself to a specific amount of increase — a tactic not uncommon in early legislative phases to allow for flexibility as a measure moves through committees. However, in the bill, its authors note that a 5-cent surcharge on every drink consumed statewide annually would net $32 million in revenue, while a 10-cent surcharge per drink would net slightly less than double that amount.

Nowhere in the bill is there language referencing Hawai‘i’s projected budget shortfall of more than $1 billion for the fiscal year, caused almost entirely by the coronavirus pandemic. The rhetoric instead focuses solely on the benefits to public health and the boon to the state’s economy should its population consume less alcohol as a result of the so-called “sin tax.”

Brewery news Germany: Bavarian Brewers' Association fears a wave of upcoming bankruptcies in the industry
Beer is a massive part of German culture - particularly in Bavaria. But the shutdown is hitting small breweries hard, The Local Germany reported on February 5.

Like many sectors, Germany's beer industry has been hit hard by the pandemic, with sales down around 4.1 percent.

But while large breweries are profiting from increased sales in the food retail trade due to people buying a lot in supermarkets, smaller beer producers are struggling to survive.

Last year most beer festivals like Oktoberfest in Munich as well as smaller ones were cancelled - but that's only the tip of the iceberg as bar and restaurant closures have hit these breweries the hardest.

Above all, the many smaller beer producers who do not have a retail presence need pubs, bars and public festivals to survive.

Georg Schneider, President of the Bavarian Brewers' Association, told local broadcaster BR24: "If there is no turnover but the costs are there, you simply have a business problem."

According to the brewers' association, about 30 percent of Bavarian beer is sold in restaurants, bars, cafes and clubs.

Brewery news Japan & China: Suntory now seeing China as its most important market in the world
As 2021 marks the beginning of China's 14th Five-Year Plan, Tetsuho Kikuchi, director president of Suntory (China) Holding Co, shared his goals for the next five years, Shine.cn reported on February 8.

Kikuchi plans to further promote the Suntory brand to more regions in the country, hoping it becomes more of a household name in China.

Due to the COVID-19 pandemic, the company suffered a 5 percent retreat in its global business, while the Chinese market turned out to be a rare bright spot where Suntory saw positive figures for 2020 sustaining its performance in 2019 "thanks to China’s effective prevention and control of the pandemic and the steady economic recovery," he said.

“Based on the surprising performance of the Chinese market in 2020, our Japanese headquarters has asked us to further increase our sales in China from around 2 billion yuan (US$310 million) to 20 billion yuan over the next decade, expanding its business from the East China market to the whole country,” he added.

“We now see China as the most important market in the world, and Suntory wants to keep pace with China’s growing economy.”

Barley news Uruguay & China: Uruguay to ship its first cargo of barley to China this month
Uruguay is expected to ship its first cargo of barley to China this month after first approving the country as a supplier to the Chinese market back in February 2019, AgriCensus reported on February 9.

Local newspaper El Observador reported that the initial shipment of 35,000 tonnes is scheduled to depart from the Nueva Palmira port this month.

Ruber Martinez, director at the port operator Corporacion Navios said that this shipment is exceptional as the country does not usually export barley, as it is mostly oriented for consumption in the domestic market.

“I believe that this is a very interesting news as Uruguay has the capacity to produce and export barley as it currently does with wheat. With this initial shipment we can open up new opportunities to export this grain,” he said.

According to the report, the protocol conditions signed by China and Uruguay for this initial barley shipment will be revealed later this month.

The Chinese General Administration of Customs (CGAC) originally approved the import of corn and barley from Uruguay into China two years ago, with the imports subject to GMO regulations in China and can only be imported through "designated ports" and processed by "designated crushers".

Brewery news Thailand: Craft Beer Association proposes new rules in hope of reopening Bangkok’s bars
Thailand’s Craft Beer Association has proposed new rules in the hope that Bangkok’s bars might be allowed to re-open after a month-long closure aimed at curbing the spread of Covid-19, The Thaiger reported on February 6.

The rules include limiting drinks to 2 per customer, limiting sitting time to 90 minutes, and banning dancing and toasts. The association says it has come up with the rules on behalf of craft beer venues adding that, while they might not cover cocktail bars and other pubs, they could serve as a blueprint for those businesses to design their own rules.

Last week, representatives from bars and breweries in the capital staged a protest outside the Ministry of Health, emptying kegs of spoiled beer down the drain. The measure was aimed at highlighting the financial fallout from the enforced closure of bars and the ban on alcohol sales in the capital’s restaurants.

Association member Artid Sivahansaphan says the new rules have been drawn up in the hope that bars might be allowed to re-open.
