Stabilize your bitterness by dry-hopping

ABSTRACT
It is well known that the bitter substances in beer undergo different degradation processes over time once bottled. However, there is not much data on the stability of bitter substances in dry-hopped beers available. A new study investigated the stability of various bitter compounds in a lager type beer that was late and dry-hopped. The brewed beers were stored for two years at 4 °C, 22 °C and 30 °C. The aging of the beers stored at 4 °C resulted only in minor changes. The beers stored at warm temperatures confirmed the high susceptibility of trans-iso-alpha acids versus the cis version to degradation (up to 8 times higher). The interesting result was found in the dry-hopped lager: all of the bitter substances in the dry-hopped beers showed less degradation due to ageing than those in the late-hopped beers. Whether the higher stability of the bitter substances in dry-hopped beer can be attributed to the changes in its composition through the addition of dry-hops was not clearly established. Additional polyphenols may play a beneficial role in this context.

Brewery news USA, NC: D9 Brewing Company opening its third location in Hendersonville
D9 Brewing Company is opening its third location, a microbrewery, taproom and coffee shop, later this spring on Main Street in downtown Hendersonville, the Hendersonville Lightning reported on February 10.

Located in the former Swanson’s piano store, the brewery will offer signature and limited releases from D9, as well as ciders on tap and wines from partner brands and will sell coffee from Main Street Coffee. D9 becomes the sixth craft brewpub in the downtown area and the first on Main Street.

Working closely with the Hendersonville Historic Preservation Commission, the new D9 brewery will respect the history of the space while bringing some new flavor to the area.

“We are excited to be a part of the community and to be a part of the growing craft brewing culture here,” Andrew Durstewitz, D9 founder and CEO, said in a news release. “We love having a location on Main Street with so much history and can't wait to be a part of its future. We're planning some pretty interesting and original products that will be specific to the area, and we're looking forward to unveiling those options to the community.”

Catawba Valley Brewing Co., one of the Southeast’s oldest and largest family-owned craft brewers, has announced its expansion to North Carolina’s coast, having acquired Skytown Beer Co. at 4712 New Centre Drive in Wilmington, the Greater Wilmington Business Journal reported on February 12.

Family restaurateurs Hayley Jensen, Stephen Durley, Carol Jensen and Michael Jensen expanded upon their success with Beer Barrio by opening Skytown Beer Company in 2018.

The concept featured Jensen's and Durley’s national award-winning homebrew recipes paired with barbecue and pub fare.

“When the opportunity presented itself to pass the torch to a great company like Catawba, we were excited to see them take the concept to the next level,” Hayley Jensen said in a news release. “It’s a crazy time to be a restaurant owner, and when you’re approached with a great offer from someone you respect, you do your best to make a good business decision. We’re very happy.”

According to the release from Catawba, the company has been scouting locations in the Wilmington area for some time.

Brewery news USA, AL: Oak Mountain Brewing Company opens its doors in Pelham
Those looking for a place to sit down and enjoy a wide selection of beers can rejoice as Oak Mountain Brewing Company has opened its doors in Pelham, the Shelby County Reporter said on February 10.

The brewery brings a unique environment to the city, capitalizing on the increasing popularity of local breweries, while also providing a prime location for events, food trucks and other gatherings.

The company was started by Peter Genereux and Clay Baldwin who wanted to make high quality local beer available in the city. The two have an extensive background in the business with Genereux working as a beer and wine distributor for Alabama Crown, and Baldwin serving as the head brewer at Birmingham-based brewery Ghost Train.

“I always thought that this area was underserved,” Genereux said. “When the Birmingham Bulls started playing here, with Oak Mountain State Park being here and with LiveNation putting money into their property, it seemed like a great place that we could be a part of for the city.”

OMBC opened its doors to the public at a grand opening on Jan. 22, where many locals had a chance to come and check out the local and regional beverages that they are currently stocking.

Brewery news UK: Beer and pub sector pressing for reopening date
UK’s beer and pub sector leaders are pressing the government to give them a reopening date, the BBC reported on February 9.

The industry is desperate to get back to business after repeated warnings many pubs will not survive.

The British Beer and Pub Association (BBPA) is asking the government for a clear timeline and a "roadmap to recovery".

The government insists that it has a plan for re-opening the economy which it will reveal after 22 February.

The BBPA said trading restrictions and lockdowns knocked sales by 56% - worth £7.8 bln - last year.

In the first lockdown in the second quarter of the year, beer sales plummeted by 96%, it said. Even during the summer, which saw the Eat Out to Help Out scheme and a temporary VAT cut on food and soft drinks, pub beer sales fell 27%.

The BBPA said that unless pubs received more assistance, even once they were allowed to reopen with far fewer restrictions, thousands would fail and be lost for good as many had built up substantial debts during the pandemic.

Its proposed roadmap states that, post-vaccination of the most vulnerable, pubs must reopen in unison with non-essential retail and other parts of the hospitality sector.
