Aroma Stability in Dry-Hopped Beers

ABSTRACT
This question is on every brewer's mind. How stable is the hop aroma in dry-hopped beers? There are of course two ways to analyse this. You can track the aroma components with sophisticated GC equipment or collect sensory data over a period of time or both. These Belgian researchers looked into the fate of hop aroma and fermentation compounds. They compared levels of short chain fatty acids, esters, terpenoids and polyfunctional thiols in bottle-refermented Belgian dryhopped beers before and after 2 years of storage at 20 °C. Except ethyl isovalerate most hop odorants and fermentation esters showed degradation over the 2-year storage period: only 45% - 70% of linalool, geraniol, and ethyl hexanoate and even less than 40% of polyfunctional thiols, ethyl isobutyrate, and 4ethyl heptanoate were detected after storage compared to initial concentrations. How the dry hopping process affects this degradation was further investigated in model media. Fermentation esters proved to be more strongly impacted in dryhopped than in non-dry-hopped beers because of hop esterase activity. In this context, bottle refermentation is a useful way to regenerate some flavors and consume packaged oxygen, especially with selected yeast strains able to release free thiols from cysteine and glutathione precursors.

Brewery news Namibia: Beer production shoots up in December 2020
Beer production shoot up in the month of December 2020 from the slump experienced during the lockdown months, according to the Namibia Statistics Agency (NSA).

The latest issue of the Beverage Sectoral Report that incorporated the December 2020 production figures, shows that the country's beer production jumped from 8,6 hectolitres in April to producing 146,3 hl in December.

The report tracks the hectolitres of alcoholic and non-alcoholic beverages produced in the country.

Namibia Breweries and AB InBev Namibia reached the lowest brewing figures in the last six years for the months of April and May.

According to NSA figures, in April 2020, the two breweries' combined production was 8,6 hl of beer but doubled in May, where they produced 16,9 hl.

Production climbed to 63,3hl in June 2020, and continued being under 100 hl until October.

The low production in April and May could be attributed to the ban of alcohol sales during that time to combat the spread of Covid-19.

Beer production for 2020, however, started picking up in October as it went to its usual volume of above 100 hl, and continued the upward trend in November with 126,7 hl before it reached its highest for the year in December with 146,3 hl.

Brewery news World: AB InBev signs for green credit worth $10.1 bln
Leuven-based brewer AB InBev, the world’s largest brewer, has signed up for a so-called green credit worth $10.1 billion (€8.3 bln), the biggest ever undertaken by a listed company in the sector, The Brussels Times reported on February 18.

The credit, officially known as a Sustainability Linked Loan Revolving Credit Facility (SLL RCF) is linked to four main areas of the company’s business: continuing to improve water efficiency in breweries globally; increasing recycled PET [plastic] content in PET primary packaging; sourcing purchased electricity from renewable sources to reach a target of 100% renewables; and reducing greenhouse gas emissions by a minimum of 25%.

The $10.1 billion is only stimulus investment, and is intended to help spur more new investment in the four areas and elsewhere.

“We are excited by the further integration of sustainable finance principles into the capital markets and welcome the opportunity to embed these practices deeper into both our finance organisation and the broader company,” said chief finance officer Fernando Tennenbaum in a statement.

“Our business is closely tied to the natural environment, and it is imperative that we continue to strengthen our leadership in addressing the increasing threats of climate change. Our business and our communities depend on it.”

Brewery news Malaysia: Heineken Malaysia to embark on rightsizing its costs
Heineken Malaysia Bhd disclosed on February 18 that it plans to embark on rightsizing its costs, as well as its organisation in line with the plans of its parent company, Heineken NV, to cut 8,000 jobs.

Heineken Malaysia’s managing director, Roland Bala, said he has announced the decision to the company’s staff and will examine every department on how the organisation could be streamlined.

He remarked that the Covid-19 pandemic is the worst-ever experience in living memory, and there is a need to think deeply on how to adapt to the new market reality as Malaysia has been severely impacted given the rotating movement restrictions imposed to curb the spread of infection.

“However, It is not just a matter of rightsizing the organisation, but we will also be looking at how to grow the business as well. In terms of identifying growth opportunities and investing in technology and digital, as the way people connect today is different from what it used to be,” Bala told the media at Heineken Malaysia’s digital press briefing.

He said the rightsizing exercise will be done in phases and it is expected to be completed by the middle of this year.

Barley news Canada: 2020-21 barley supply reaches ten-year high
For 2020-21, total barley supply in Canada reached a ten-year high at 11.8 million tonnes (Mt), due to good production, despite low carry-in stocks, Agriculture and Agri-Food Canada said in its February report.

Statistics Canada (STC) reported that total exports of barley for the August-December 2020 period increased by 45% compared to the same period a year ago, including a 62% rise in raw barley grain exports and a 5% drop in barley product exports.

For the entire crop year, total exports are expected to be 3.6 Mt, 18% higher than last year and the highest level since 2008.

Total domestic use increased by 6% for the August-December 2020 period, largely due to a 6% rise in the volume of animal feed, waste and dockage, in spite of a drop in food use and industrial use, according to STC. For the entire crop year, total domestic use is expected to increase by 2%, driven by strong feed use. Industrial use is expected to recover to some degree, but will be lower than in 2018-19.

Barley news Ireland: No new varieties added to spring malting barley list for 2021
There have been no new varieties added to Ireland’s spring malting barley list for 2021, which was released on 18 February, the Irish Farmers Journal reported.

While malting barley growers may not receive a choice of variety, it is important to keep an eye on the agronomic traits to assist in management decisions throughout the season.

Gangway, Laureate and RGT Planet remain the three recommended varieties and there have been a few changes to agronomic and quality traits.

Laureate and RGT Planet are now level on relative yield scores at 101, while Gangway is at 99.

Planet remains the tallest variety, followed by Gangway and Laureate.

There have been no changes to lodging, breakdown or ripening scores. Gangway still tops the list on these traits.

No changes were recorded on disease resistance scores.

All three are promising on resistance to mildew, while Laureate and Planet have a resistance score of 8 for net blotch and Laureate tops the list on rhynchosporium and brown rust.

There has also been little change to quality characteristics. Gangway is on top for hectolitre weight, while Planet has the lowest screenings at 2%.

It’s worth noting that all protein percentages were very high and well above distilling and brewing specifications.

The Japan Spirits & Liqueurs Makers Association has announced a sweeping new set of industry-wide regulations aimed at curbing the spread of products labelled as ‘Japanese whisky’ that are sometimes nothing of the sort, Forbes reported on February 16.

For most of its modern history, Japanese whisky has adopted the opposite approach to the Scots. Where the latter has some of the strictest laws in the world about what is allowed to be called ‘Scotch whisky’, Japanese whiskymakers haven’t had significant regulations on the matter in place until now.

The ongoing supply crisis that has roiled the Japanese whisky industry for years meant that the lack of regulation has led to many companies cutting corners, and pushing the boundaries on what actually constitutes as ‘whisky’ produced in the country. Some tricks include importing Scotch whisky and bottling that as ‘Japanese’, or even mixing imported Scotch with Shochu (a popular spirit drink) and calling that ‘Japanese whisky’. Major Japanese whisky industry figures have previously expressed significant concern about what this means for the future of the industry, and that it might dent the confidence of consumers.
