The hop flavour database


ABSTRACT
By number, about 450 flavour volatiles in beer are hop derived. In this very ambitous work, M. Zunkel catalogued all this components according to their origin, flavour thresholds, flavour description, molecular structure and references. The outcome is an impressive excel list that could be called the hop flavour bible. An excerpt of the database was presented as a poster at the ASBC annual meeting and the entire database will soon be available through the ASBC.

Brewery news USA, NY: Grimm Artisanal Ales to open in New York
Grimm Artisanal Ales announced the release of the first batch of beer called “From the Hip”. Only twenty barrels of this limited edition beer will be made, Beer Pulse reported on June, 18.

Beginning in July 2013, the beers will be available on draft in craft beer bars across New York City as well as a select few outlets in upstate New York including Buffalo, Rochester, Syracuse, Utica, and Albany.

A small portion of the company’s production will be bottled, and will be available in boutique bottle shops across the state.

As New York City’s only brewers specializing in beers inspired by Belgium’s freewheeling brewing traditions, Grimm Artisanal Ales’ approach is to make sophisticated yet inventive ales that push boundaries.

Being a small upstart company, Grimm Artisanal Ales’ business model is based on principles of the shared economy; rather than investing in their own physical space, they brew their beer in other breweries’ facilities, helping them to keep their brewing pipeline full and benefitting both parties. Each recipe is extensively tested in the company’s Brooklyn home, before they travel to their host brewery to and leave the beer to ferment on-site until it is ready to be kegged or bottled.

Brewery news USA, MI: Tibbs Brewing Co. plans to open in Kalamazoo, Michigan this fall
Tibbs, and his wife, Cindee, the owners of Tibbs Brewing Co., plan to open a small-batch microbrewery and specialty soda shop by fall in Kalamazoo, Michigan, The Republic reported on June, 18.

"One year, instead of buying presents (for Christmas) we had to make something, so I said either we make cookies or beer, so I learned how to make beer," said Kevin Tibbs, 36. "Brewing has been a passion of mine and we've always been beer people."

The owners are working on obtaining a state micro-brewing license and permits from the city of Kalamazoo. They aim to open the brewery by October 2013. Renovations will begin this month and the Tibbs plan to invest at least $35,000 into the new microbrewery.

Tibbs Brewing Co. will brew on a one-barrel system and will have a handful of beers on tap. The Tibbs said they are trying to gauge which brews will become staples.

Last month, they opened their home to about 100 people in the community, including other brewers opening businesses downtown this year, for their first beer tasting event.

On Friday June 21, 2013, Sebago Brewing Company will introduce the highly anticipated 2013 version of their Single Batch Series Brew, Hop Swap, Brewbound reported on June, 17.

Hop Swap is named for a process. During the deliberate and annually experimental brewing process, Sebago swaps out the hops featured in this American Ale, providing a uniquely hoppy experience each year.

Hop Swap can be enjoyed on draft at Sebago Brewing Company’s four brewpubs in Portland, Kennebunk, Gorham and Scarborough as well as at various craft beer bars and restaurants throughout New England.



Brewery news USA, WA : Airways Brewing Company releases Loud Lady Imperial IPA
Airways Brewing Company introduces Loud Lady Imperial IPA, a new, limited-edition beer from the Kent-based brewery’s expanding its line of delicious handcrafted beers, Brewbound reported.

The Northwest-style IPA will be released in small batches only once a year.

“We’ve been planning to brew a true, Imperial IPA for a while – one that was very different from our flagship Sky Hag IPA,” said Alex Dittmar, owner and head brewer at Airways Brewing Company. “We added tons of citrusy Northwest hops to this beer. It’s a big, tasty, aromatic IPA, but not so over-the-top that you can’t have a full pint.”

Loud Lady Imperial IPA was officially launched on June, 14 and is available in 22-ounce bottles at both Airways locations for $7.50.

Bottles are available since June, 17 at select specialty bottle shops throughout the Seattle and Tacoma area. The beer will also be available on draft at both the Airways Brewing Tap Room in the Kent industrial area and the Airways Beer & Bistro in Downtown Kent.

Brewery news USA, GA: SweetWater Brewing Co. launches a new seasonal line of beers and brings back the Waterkeeper Hefeweizen
Atlanta’s SweetWater Brewing Co. is bringing back Waterkeeper Hefeweizen to its Catch and Release seasonal line up, Shanken News Daily reported on June, 17.

It is available since last week across the Southeast in six-packs and on draft, as well as part of the Tackle Box summer variety pack.

SweetWater is launching the beer as an extension to its “Save Our Water” campaign, which donates proceeds to the protection and preservation of local waterways.

The brewerY recently finished a 250-barrel brew house expansion as well as entered three new states, bringing its total footprint to nine states across the South-eastern U.S.


Brewery news USA, CO: Fort Collins Brewery to launch a line of small-batch beers
Approaching 10 years in the beer business, Fort Collins Brewery becomes a little creative with a new pilot brewing system, Coloradoan reported on June, 13.

Later this year, the brewery will install a pilot brew system providing its brewers the leeway to experiment more with small-batch beers.

The new brew system ties into a new slogan, “Create Share Savor,” that the brewery unveiled this week. Marketing Director Charles Stanley said the new five-barrel pilot system will increase the number of small-batch beers produced at Fort Collins Brewery from one per month to possibly 10 per month.

“The beers will be pretty broad, not sours,” Stanley said. “This comes from the passion of our brewers, and the money is ultimately in the larger production batches because they are more cost effective, but brewers love to get creative and experiment. The five barrel is more of an outlet for that.”

Stanley said that the new pilot system will provide Fort Collins Brewery the opportunity to partner with the community and local businesses to brew beers.

While Fort Collins Brewery plans to have the pilot system operational by October, it will also replace its current 20-barrel brew house with a 50-barrel brew house.

Stone Brewing Co. released Stone RuinTen IPA, on June, 17, a re-brew of 2012’s infamous Stone Ruination Tenth Anniversary IPA, Brewbound reported.

Last June, Stone Ruination Tenth Anniversary IPA was brewed to celebrate the tenth anniversary of the ground-breaking double IPA Stone Ruination IPA.

“We brewed this beer using the same ingredients as in Stone Ruination IPA” explained Stone Brew master Mitch Steele.

If Stone Ruination IPA is “A Liquid Poem to the Glory of the Hop,” then Stone RuinTen IPA is “A Stage Dive into a Mosh Pit of Hops.”

For an optimal experience, this beer should be enjoyed before the “Drink By” date on the bottle – in fact, Stone specifically recommends enjoying the beer sooner than later to maximize the redolent hop aromas and flavour.


Brewery news USA, NH: Smuttynose Brewing collaborates with Stone Brewing Co. to release Cluster’s Last Stand
Smuttynose Brewing, located in Portsmouth, New Hampshire-started collaboration with San Diego’s Stone Brewing Co. to create Cluster’s Last Stand, Shanken News Daily.com on June, 17.

The limited release beer, which marks the first collaboration brew for Smuttynose, will be released by the middle of July as part of the brewer’s Short Batch Series.

Only 30 barrels of Cluster’s will be produced at Smuttynose’s Portsmouth brewery. It is meant to be a recreation of the well-known Ballantine IPA as well as a tribute to the original American IPAs and the Cluster hop, which the brewer says is “now considered passé.”

The beers in the Smuttynose Short Batch series are available at select locations along the East Coast.

PEI Brewing Company has released a new seasonal beer with an unusual ingredient: lobster shell, Canadian Beer News reported on June, 17.

Lobster Ale is Saison-style ale that is not only intended to be paired with lobster, but which also has a closer connection to the tasty crustacean, as head brewer Bryan Carver explains:

Brewery news Canada, ON: Lake of Bays Brewing collaborates with NHL Alumni Association
Lake of Bays Brewing has announced plans to release a new series of beers developed and branded in collaboration with the NHL Alumni Association, Canadian Beer News reported June, 18.

The first beer in the series – described as “a lager, traditionally brewed in small batches using only natural ingredients” – is expected to be released to retail in October, with additional “special release and collector brews” to follow.

Proceeds from the beers will go to support the NHL Alumni, a non-profit organization that “serves as a passionate advocate for greater quality of life benefits for all former NHL players.”

On Thursday, June 20 and Friday, June 21, Berghoff Brewing will debut its line up of new beers, breathing life into a classic brand that has offered fine beer throughout the Midwest since 1887, with festive Launch Parties in Chicago, Illinois and Milwaukee, Wisconsin, Brewbound reported on June, 12.

Berghoff aims to capture a larger audience of beer lovers with their revamped products, and the launch parties are a first opportunity for discerning Illinois and Wisconsin beer lovers to sample their new recipes. Berghoff beers are available in Illinois, Wisconsin, Michigan and Indiana.

“We are truly excited to be showcasing our new beers. We’re proud of our updated portfolio, and we look forward to sharing them with old fans and a whole lot of new consumers who have never tried Berghoff before,” says owner Ben Minkoff, whose family has owned General Beverage Distributors in Wisconsin for the past 80 years and purchased the Berghoff brand in 1994.

Ben Minkoff consulted with brewing experts Randy Mosher and John Hannafan to create the recipes for the top-notch German-style beers that were brewed at the Stevens Point production facility, located in Stevens Point, Wisconsin.


Brewery news USA, WI: Capital Brewery to expand
After a six-month site search, the new brewery will begin rising this summer in a nine-acre field at the end of Community Drive at the south-western edge of Sauk City, Wisconsin and be ready to begin producing beer next spring, said Capital brewing production manager Brian Destree, Wisconsin State Journal reported on June, 18.

“We anticipate being fully operational by this time next year,” Destree said.

The new brewery would have a capacity of about 100,000 barrels out of the gate, and fermenting tanks could be added in the future to bring it up to 250,000 barrels without expanding the expensive brew house, Destree said. Capital expects to brew about 33,000 barrels of Wisconsin Amber, Mutiny IPA, Supper Club and its other beers this year.

“It’ll be the heart and soul of our operations,” Destree said.

The new brewery would house a tasting room, company offices and an outdoor entertainment venue.

Long time brew master Kirby Nelson and general manager Carl Nolen left the company last fall to start Wisconsin Brewing Co., which plans to begin production this fall at a new brewery in Verona. Barley news EU: European Commission lifts grain crop estimate despite this month’s flooding
The prospect of near-record yields in Spain, and benign conditions in Romania, spurred the European Commission to lift hopes for the bloc's grains harvest despite this month's "vast flooding" which has hit German crops, Agrimoney.com reported on June, 17.

The commission's Mars agriculture division hiked its estimate for the barley yield in Spain - the EU's biggest producer of spring barley - by 0.6 tonnes per hectare, raising the forecast for the soft wheat result too by 0.2 tonnes per hectare thanks to the country's "good crop conditions".

"Yield potentials both for winter and spring cereals are among the highest ever," Mars said, flagging the impact of below-normal temperatures in preserving soil moisture and "favouring the ripening of winter crops in southern regions".

Temperatures averaging up to 4 degrees Celsius below normal have "permitted the maintenance of sufficient soil moisture, despite the cumulated precipitation during the past month having been lower than the long-term average for most regions".

Prospects for harvests in Hungary and Romania too were upgraded, thanks to abundant rainfall, albeit so much that they "created favourable conditions for plant pests and disease".

The increase in drinking and partying is a bit easier to explain when you consider that Egypt was the first nation on earth to ferment barley to produce what known today as beer, The Media Line, The Media Line posted on June 15th.

The tradition of drinking beer is well accepted among many Egyptian Muslims and non-Muslims despite the fact that there is a prohibition against drinking intoxicants in the Koran. Brewery news Czech Republic: Interest in mixed beer drinks in pet packaging is on the rise
Over the last few years, popularity of PET packaged drinks among consumers has been on the rise,SABMiller in Czech Republic reported on June 13th .

In segments of mixed beer drinks, this type of packaging represents 15% of sold volume while during the same time period last year, it was only 7% (January - May 2013 vs. same time period of last year, modern market, source: Nielsen). Consumers value the practicality especially. It provides them with a certain comfort during consumption. "PET bottles are light, strong and repeatedly closeable. Czechs simply see its advantages and so its market share is on the rise," said Miroslav Peichl, brand marketing manager of Gambrinus. New packaging should support another boost in the interest in mixed beer drinks from Gambrinus that is sought after by consumers, especially for its pleasant taste and content. "Besides the characteristic, well-balanced taste of the traditional and popular Gambrinus beer, the fruit flavour results in low calories because there are no sweeteners or preservatives," Peichl added. Barley news EU: Winter barley needed to fill total demand by malting industry
As in former years, winter barley is needed to fill the total demand of the malting industries. According to an industry analysts’ report earlier in June, cautious estimates are as follows:

French total winter barley is forecast to reach 7.3 mln tons, of which 1.8 mln tons malting varieties, plus a large quantity of the compromise variety Cervoise.

Germany total winter barley is expected at 7.8 mln tons, of which 100 - 200,000 tons of two-row malting varieties.

U.K. total winter barley crop is forecast at 2.0 mln tons, of which 1.0 mln tons selectable malting barley.

Weather will decide about the final results of the crop. These figures are supposed to show that there is by no means a comfortable surplus situation, but total supplies should be sufficient with the help of winter barley, analysts said.

Barley news Russia: Winter barley harvesting starts in southern regions
Russia, one of the world's key wheat exporters, has started the winter barley harvesting campaign in its southern regions of Krasnodar and Stavropol, responsible for the country's largest grains production and cereal export via the Black Sea, Business Recorder reported on June, 16.

Russia, historically the third-largest wheat exporter in the world, targets a large grain crop this year to replenish stocks after last year's drought and to boost its exports.

The harvest campaign in the Krasnodar and Stavropol regions began early, ten days ahead of the plan, the Agriculture ministry said in a note on June, 14. These regions have harvested 148,300 tonnes of grain from 27,700 hectares, with yields at 5.28 tonnes per hectare, up from 2.98 tonnes at the start of the campaign last year. Massive harvesting of other grains in the southern and north Caucasus federal districts was expected to start in the last ten days of June.

As to the spring grain-sowing campaign, the country sowed 0.2 percent more grain than planned, on acreage of 30.4 million hectares by June 13, an annual increase of 505,000 hectares.
