How to assess the sensory impact hop varieties used in the boiling process

ABSTRACT
We all know the dilemma of estimating the contribution of a hop variety to the beer flavor when used during boiling. These Japanese researchers propose a standardized protocol for a sensory evaluation of single variety hop samples boiled in water. Using PCA they found that fruity descriptors could be connected to the varieties Citra and a new Japanese variety called Fuano Beauty whereas Saaz and Mittelfrueh hop samples were connected with herbal, tea and spicy flavours. This protocol may help to forecast the flavour contribution of different varieties in the final beer when used as late hop in the wort boiling process.

Brewery news USA, IL: Illinois craft brewers to limit their beer production
A bill signed into law Monday by Illinois Governor Patrick Quinn will enable the state’s self-distributing craft breweries to produce up to 30,000 barrels annually, doubling the previous amount allowed, Brew Bound reported on August, 21.

According to a statement from The Associated Beer Distributors of Illinois (ABDI) the law, HB 1573, does not affect the ability for a craft brewer to self-distribute up to 7,500 barrels or to simultaneously hold a brew pub (retailer) license.

HB 1573 was sponsored by Representative Charles E. Jefferson (D-Rockford) in the House and Senator Tony Munoz (D-Chicago) in the Senate, and the final bill was the result of several meetings with Senate President John Cullerton (D-Chicago), the Associated Beer Distributors of Illinois (ABDI), the Illinois Craft Brewers Guild (ICBG), and the Wine and Spirits Distributors of Illinois (WSDI).

ABDI Members, who are local, independent beer distributors, have established craft divisions to handle the new products and deliver as many different choices as possible to consumers.

On June 1, 2011, SB 754 was signed into law creating a craft brewer license and an exemption to self-distribute 7,500 barrels if they manufactured no more than 15,000 barrels. SB 754 also allowed a brew pub to simultaneously own a ...More info on site

Brewery news Canada, BC: Pacific Western Brewing introduces a new brewing system
Pacific Western Brewing has introduced a new brewing system and beer drinkers stand to benefit as a result, HQ Prince George reported on August, 22.

Pacific Western Brewing's production development manager Paul Mulgrew said it will lead to new leading edge recipes, one-off beers and seasonal releases all to the benefit of consumers.

"I think they can expect just a higher quality of product across the board but also a broader experience of what beer potential is."

Brewmaster Henryk Orlik admits the improvements will help PWB stay competitive. Orlik says the new brewing system is one of many upgrades at PWB recently including the addition of two outdoor fermenters.

Brewery news USA, PA: Ruckus Brewing Co. to open a new facility
The owners of Ruckus Brewing Co. provided more details of their new operation at the former Neuweiler Brewery in Allentown, Pennsylvania, Leigh Valley reported on August, 22. CEO Josh Wood said the site will produce about 100,000 barrels of beer a year, compared to the 5,000 to 10,000 barrels Ruckus makes in Cooperstown Brewing in Milford, N.Y.

Ruckus officials said the brewery may be online by the end of 2014, but more likely early 2015.

The biggest obstacle right now is the abandoned Neuweiler building, built in 1913 at Front and Liberty streets on the Lehigh River waterfront but abandoned after it closed in the last 1960s. Wood said the company has a three-phase construction plan and will develop three of the seven buildings at the site.

Ruckus officials previously said the Allentown brewery is likely to become the new Ruckus headquarters, complete with a brewpub and a centre for tours.

In addition to its popular labels Hoptimus Prime and Hedonism, Ruckus revived Reading Premium beer. Asked if there may be an Allentown or Lehigh Valley named brew, Wood said the company is investigating the idea and “obviously the Neuweiler name is sitting there.”

Brewery news Canada, ON: Collective Arts Brewing to open with its launch beer Rhyme & Reason Extra Pale Ale
Collective Arts Brewing has announced the release of its first project, Rhyme & Reason Extra Pale Ale, Canadian Beer News reported on August, 23.

Debut brand Rhyme & Reason Extra Pale Ale was developed by “brewmaster-in-residence” Ryan Morrow, who describes it as follows:

Rhyme & Reason 5.7% abv showcases the very best hops and it’s far more sessionable than the typical American IPA.

Rhyme & Reason has been soft launched on draught at several bars and pubs in Toronto and Ottawa, but it will be the release of the bottled version next month that will showcase the full scope of the Collective Arts mission, as each label will feature artwork from one of almost 90 artists in various media including visual art, photography, film and music. To facilitate multimedia content, each label can be scanned with the Blippar mobile app to launch online short films, music videos, artist interviews and more.

Rhyme & Reason Extra Pale Ale will be officially released on September 12th with a launch event at the Gladstone Hotel in Toronto. Following the launch, it will be available in bottles at LCBO locations, and on draught at select licensed establishments.

Brewery news USA, MI: Kuhnhenn Brewing Company to expand by opening a new facility
Kuhnhenn Brewing Company has announced expansion plans. Their new 35,000 square foot building will be in Clinton Township, MI. It will be divided into production, packaging and feature a tasting room, ABC Action News reported on August, 21.

They have acquired a high-speed bottling line for packaging beer for the sale to retail stores. Production and distribution of the signature Kuhnhenn Meads will also increase. Distribution of keg and case product will initially focus on Southeast Michigan and expand to the rest of the state within the first year.

The facility is located at 36000 Groesbeck in Clinton Township, Michigan and it is projected to be operational in the first quarter of 2014.

The current Warren location will remain open with a full line of beers, and focus on the production of small-batch experimental brews, as well as an increased barrel-aging program. With the opening of the new facility, Kuhnhenn Brewing will hire additional 20-30 employees.

Kuhnhenn Brewing is consistently ranked in the top breweries in the world.

Brewery news USA, IN: Flix Brewhouse to open a new facility in Indianapolis, IN
Flix Brewhouse is set to open a new location at the Merchants’ Square shopping center in Indianapolis, IN, Shanken News Daily reported on August, 22.

The company has signed a lease with Ramco-Gershenson Properties Trust for a 37,000-square-foot Flix Brewhouse, a cinema brewery that will show movies on state-of-the-art screens.

Movie-goers can order fresh food from their seats and choose from a craft list that includes in-house beers as well as popular local labels.

Construction of the new facility is slated to begin by year-end, with an official opening slated for fall 2014.

Flix Brewhouse currently operates 12 cinema brewhouse locations across California, Nevada, Texas and Washington.

Brewery news Canada, AB: Alley Kat Brewing re-releases Pumpkin Pie Spiced Ale
Alley Kat Brewing has announced the upcoming return of a popular autumn seasonal, Canadian Beer News reported on August, 22.

The release of Pumpkin Pie Spiced Ale is an annual tradition for the brewery that started in 2007 when it was available exclusively at Sherbrooke Liquor under the name Pumpkin Pi. Now, under a slightly different name, the 5.4% abv ale is in wider released.

“Pumpkin Pie Spiced Ale is like the Fall season personified – an amber rich beer infused with spices and pumpkin from beginning to end. It’s all the things you love about Fall in a beer!” says Alley Kat’s owner Neil Herbst.

This year’s batch of Pumpkin Pie Spiced Ale will be released in September in a limited run of 650 ml bottles available throughout Alberta. An official launch party will take place at the Alley Kat brewery on Thursday October 3rd.

Brewery news USA, CO: Avery Brewing Company revives duganA IPA
As fervent devotees of hops, years ago the brewers of the Avery Brewing Company embarked on a quest to create a transcendental IPA capable of quenching the most voracious lupulin desires. Enlightened, duganA IPA has flourished as brutally bitter, dank, piney and resinous ale designed for those seeking a divine hop experience, Brew Bound reported on August, 21.

duganA IPA (pronounced like llama) is released once a year and was designed to showcase the dank, piney and resinous notes of Chinook hops. This double IPA is dry and remarkably sessionable, especially for an 8.5% ABV and 93 IBU beer.

duganA will hit the shelves and taps in select markets starting this week.

Brewery news Turkey: Anadolu Efes expects new restrictions to limit beer industry growth
Turkey’s biggest brewer and SABMiller partner Anadolu Efes expects new restrictions on marketing and sales of alcohol to limit beer industry growth in the country, BeverageDaily.com reported on August 19.

Beer in Turkey is already very heavily taxed – the highest excise in Europe after Finland.

“New measures will probably limit the growth potential of the industry in the coming years,” Anadolu Efes corporate and regulatory affairs group director, Saltuk Ertop, said.

Anadolu Efes held an 89% share of the Turkish beer market in October 2011, and Ertop assessed the impact of the new law, introduced in May, that includes restrictions on the marketing and sale of alcoholic beverages including beer.

“Some of the restrictions are already in-force (such as advertisements), but some others (such as a night sales ban) are coming into force gradually,” he said.

“We therefore believe that it is a bit early to talk about the consequences of the new law on our sales results. However, one can anticipate that these restrictions will increase the pressure on the industry in Turkey,” he said.

The Turkish government also issued rules relating to the labelling of drinks around a week ago, and beer bottles and cans (subject to a 10-month implementation phase) must now ...More info on site

Brewery news India: Molson Coors ready to roll out its King Cobra brand from Bihar brewery
Global beer giant Molson Coors Cobra is set to roll out its King Cobra brand of beer from its brewery in Bihar, News Track India reported on August 22.

"The brewing capacity has been doubled and the packaging capacity has been tripled after we took over a local brewery at Bihta near Patna in 2011. We are ready to roll out our famous King Cobra brand beer from a world-class full-fledged quality laboratory in place," Kandy Anand, president of Molson Coors International, said.

He said the company has invested Rs.63 crore in the expanded project to-date. "We are committed to 100 percent investment in Bihar that amounts to Rs.250 crore," he added.

Anand said the multinational company, which currently sells Iceberg 9000 beer in the state, was now expanding its footprint to Punjab, Haryana and West Bengal.

According to him, BIhar is one of the smaller markets for beer consumption in the country. The market size of seven million cases is likely to shrink to six million cases owing to some policy issues on the pricing (taxation) front.

Last year, inspired by developments in Bihar, London-based entrepreneur and member of the House of Lords, Karan Bilimoria, decided to triple the capacity of his Cobra beer ...More info on site

Brewery news Zambia: National Breweries to build new opaque beer brewery in Lusaka
National Breweries Plc will this year invest a whopping K 132 mln ($24 mln) in building a high-tech opaque brewery in Lusaka, 4-traders reported on August 22.

Executive Director, Mr. David Cason confirmed the development saying the new brewery will be built at the same site where the old Lusaka brewery is currently situated along Sheki Sheki Road in the Emmasdale Area.

The new 2.1 mln hectolitre plant will see a complete overhaul of the old plant, which has stood the test of time having been built in the early 1960s.

"The current Lusaka brewery has definitely stood the test of time and we at National Breweries Plc are very excited about the huge investment that we are making to modernise the brewery with the installation of high-tech machinery for enhanced efficiency and productivity," Mr. Cason said.

Aside from up-skilling the current staff, a few local highly technically specialised individuals are expected to be employed before the completion of the plant, which will, for the first time, house a staff canteen for all employees.

"The new plant will be a highly automated one compared to the current plant and as such, a lot of training will be done for the existing employees and those that ...More info on site

Barley news Ireland: Still high percent of barley fails to pass malting quality criteria but failure rate expected to fall as harvest continues
As much as 50% of malting barley varieties presented to Dairygold, Ireland's largest farmer-owned business, on some days last week failed to pass the quality criteria required for malting, Irish Independent reported on August 20.

The news comes as yield projections for the country suggest that this year's harvest could be up to 10% higher than expected and should top 2 mln tonnes. Teagasc had forecast a yield of 1.9 mln tonnes.

High protein levels, reaching up to 13.5% in some cases, were the main reason for the malting failures, but the presence of green grains was also an issue for some loads. The upper and lower limits for protein levels in malting barley are 11.5% and 9% respectively.

A spokesman for Dairygold confirmed that a significant proportion of malting barley crops presented at intake points in south Tipperary early last week failed on high protein.

"On some days up to 50% would have failed but over the course of the week it was about 30%," he said.

However, he predicted that the failure rate would fall as the harvest continued. Approximately one-third of Dairygold's malting barley supply has been harvested so far.

The price difference between feeding and malting barley is usually €25-30/t so farmers ...More info on site

Brewery news Denmark: Carlsberg importing beer to Denmark ahead of a potential shortage
Carlsberg A/S is importing beer to Denmark ahead of a potential shortage after a labor dispute at one of its breweries in the country halted production, Bloomberg reported on August 22.

“We are working very hard now on getting supplies from other countries to our customers,” Jens Bekke, a spokesman, said. “This is not a conflict between Carlsberg and the unions, it’s more a conflict between some employees.”

Last week, 130 workers at its Fredericia brewery walked out because a new hire isn’t affiliated to the same union as other employees. The brewery, which has 800 workers, makes all of Carlsberg’s draft beer in Denmark. Production of soft drinks was also affected. Carlsberg has about one week’s stock of draft products and its customers typically hold inventory of one to two weeks.

The workers who have been on strike since Aug. 14 were scheduled to meet again at 6 a.m. on August 23, Bekke said. A labor court has ordered the workers to be fined for every hour they are on strike, and Carlsberg has applied to the court for permission to fire them as their action is against the union agreement.

Bekke said the application shouldn’t be considered a hostile move and is ...More info on site

Brewery news El Salvador: Communities protest against SABMiller subsidiary’s new well that may leave them without water
Communities in the municipality of Nejapa, 21 kilometres north of San Salvador, began to mobilise in April against the plan of Industrias La Constancia (ILC), a subsidiary of the London-based multinational SABMiller, to bore a new well at the company's plant in the district of Galera Quemada in the same municipality, Independent European Daily Express reported on August, 21.

The communities, backed by environmental organisations, maintain that if the new well is drilled, the company will drain the local aquifer and leave local farmers and residents without water.

Only 69.8 percent of rural households in El Salvador have piped water, compared to 93.5 percent in urban areas, according to the Multi-Purpose Household Survey of 2012.

ILC dug two wells in Galera Quemada in 1999 and transferred its soft drinks bottling operations there, including the Coca-Cola brand. Now it needs a third well to increase its supply of purified water.

The company began its operations producing beer in 1906, under the management of Rafael Meza Ayau, a prominent member of the local elite at the time. In 2005, when it had broadened its activities to include juices, bottled water, soft drinks and energy drinks, it was acquired by SABMiller, the world's second largest brewer.

SABMiller operates ...More info on site
