You'll have to cut Jacob Parlett some slack if he starts getting all philosophical about the beer he’s brewing for his soon-to-open Mountain Roads Brewing, Democrat and Chronicle reported on February 3.

Parlett worked as a software developer for a local company before deciding to enter the craft beer business. It’ll be just a few weeks until Mountain Roads opens in the Genesee Valley Regional Market.

A soft opening over the weekend for friends and family gave them a taste of what’s to come and just piled on the excitement for Parlett, who began brewing recipes at home two summers ago in anticipation for his new venture.

“If I look back at where I was a year ago, it feels like I’ve come a long way,” said Parlett, of Penfield. “If I look back to where I was four or five months ago, it feels like it’s crawled along.”

Parlett will be selling cans to go at Mountain Roads, which will celebrate a grand opening from 1 to 6 p.m. Saturday, March 1.

His flagship beer, Green Ambition, which is a hazy IPA featuring Citra, Simcoe and Sabro hops, will be available. His Haze Horizons line features different and newer hops varieties.

“Maybe one or two others if I can sneak them in,” said Parlett, who, if you haven't guessed, is a hazy IPA fan."I've got a bunch more beer in the tanks that are brewing up for the grand opening."

Parlett is purposely starting slow, so he has no immediate plans for a taproom. As new beer comes out and he has more product to share, can releases once or twice a month will be done Saturdays. He's also tentatively planning to be open from 4 to 8 p.m. Thursdays and Fridays.

That will depend on business and how much beer he has brewed on his small, one-barrel system.

"I'm super excited to be finally opening," Parlett said.

Mountain Roads Brewing is at 900 Jefferson Road, Suite 1603, Henrietta, in the Genesee Valley Regional Market.
