If all goes well, there will soon be a new brewery at 5 Mill & Main in Lancaster, at the site of the former Battle Road Brewery, the MetroWest Daily News reported on November 18.

At its Nov. 16 meeting, the Maynard Select Board approved an all-alcohol license for Bull Spit Brewing Company.

At a public hearing before the vote, James Hunt, vice president of operations for Bull Spit, said he hopes to open the taproom in late January or early February 2022.

The brewery was founded in 2019 in Lancaster, opening on “the cusp of a pandemic that we didn’t know was coming,” Hunt said.

With plans to create a “destination experience” for patrons, they quickly adjusted the plan to create a distribution model, which led them to expand, first into Winchendon and then to Maynard, he said.

“We love the indoor space and we love the options for the outdoor space. And we loved the fact that it was essentially a turnkey brewing operation. We decided Maynard was a strategic spot for us and is going to be influential in creating and promoting our brand,” Hunt said.

The space has a full commercial kitchen and they are currently looking for a chef to create a food menu. In Lancaster they purchased a food truck.

“The responsible thing to do is to always serve food when you are offering alcoholic beverages. But we’re a taproom first,” Hunt said.

The 15-barrel brew house will be a family-friendly establishment, offering live music. The taproom will offer beer and wine and craft spirits created at the Winchendon distillery.

The next step is to secure a license with the Alcoholic Beverages Control Commission.

“Hopefully our paperwork doesn’t sit on their desk for too long,” Hunt said.
