Brewery news

Trinity Brewing Company, a popular west side brewery and eatery, is being acquired by a Castle Rock brewery, Fox21News reported on December 1.

According to a post by Trinity Brewing on Facebook, the brewery’s last day of operation will be Dec. 22. The location at 1466 Garden of the Gods Road will then become the second location for 105 West Brewing out of Castle Rock.

“While we’re excited about this new chapter, we also want to take a moment to celebrate Trinity Brewing for their 17 amazing years of fun, creativity, and community,” said 105 West Brewing founder and owner Eric Seufert. “We’ll keep a few of Trinity’s traditions alive, while adding our own 105 West flair.”

105 West Brewing is so named because it sits on the 105th West meridian line, which incidentally, so does the Trinity Brewing location. The new brewery said it would keep the 105 West name for that reason.

According to it’s website, 105 West Brewing is a gratuity-free establishment that prides itself on paying its staff a living wage not dependent on tips. 105 West at Garden of the Gods will feature 24 taps of 105 West beer, wood-fired pizza and smoked wings, Bear’l Cellars wine, draft mead, House made Gluhwein for Christmas, and more.

Renovations are planned in early 2026, and 105 West said it would stay open during construction.
