Delmar region’s newest craft brewery is named 3rd Wave Brewing Co. Behind debuts by Evolution Craft Brewing Co. in Salisbury in the spring and Burley Oak Brewery in Berlin a year ago, 3rd Wave settles in on Bi-State Boulevard in Delmar, delmarvanow.com reported on September, 27.
“I used to be a surfer, although I wasn’t good at it,” said Lori Clough, a 3rd Wave partner.
She intends to make good at the business. So much so, she just quit her day job, devoting all her time to the brewery and tasting room in the former Evolution brewery that outgrew the space and moved in April to a larger building in Salisbury.
“I quit my job, so this has to work,” she said.
Clough and business partner Suellen Vickers, a Lower Shore dentist who also surfs, decided to cash in on the craft beer craze catching on in the region after feeling pretty crafty about batches of brew they made with home beer-brewing kits. When the Evolution property went on the market, they bought it.
Two months and five beer batches ago, they hired brew master John Panasiewicz of Pennsylvania who learned the business at the Iron Mill Brewery in West Chester.
So far, Clough has developed a recipe for two of the company’s three flavors to date: an IPA and a porter.
Panasiewicz has created a pumpkin pale ale that should be ready for tasting in early October.
3rd Wave counts Evolution, Burley Oak and Delaware’s Dogfish Head craft breweries among inspirations, and key players in making the lower Delmarva Peninsula a destination for craft beer.
3rd Wave intends to expand with more flavors of beer, extended operating hours, facility tours and, eventually, catching up with other local brewers, a bottling and distribution component, Clough said.
“We need to get down to a good routine before we expand,” she said. “We want to appeal to a wide range of people.”
Currently, 3rd Wave turns out about 20 weekly barrels of beer available on tap or by the growler.
Mary Lee Pase, vice mayor on the Delmar Town Council, stopped in earlier this week with greetings. A brewery run by women is unique, she said.
“I’m happy they are here,” Pase said. “We felt there would be something (coming) here, and having two lady owners makes it interesting.”
