Two years ago the Flying Tiger Brewery was just an idea thought up by three guys who wanted to bring a craft brewery to Monroe, Knoe 8 News reported on September 4.
"Finally today we are at the point where we are taking over this location and we have two big buildings. It’s a four thousand square foot warehouse with a two thousand square foot warehouse, which will serve as our tap room," says co-founder Robert Brewer.
"In the brew house you are going to see what you might expect to see in a brewery, you're going to see all these big stainless steel fermenters, the brew equipment and some of our storage equipment on this side," says Brewer.
"We are going to try to create something unique, different then other taprooms that we've seen around the country, expect something different when you come here, hoping to have something nice," says Brewer.
Co-founder James Simpson say they are using a test batch system to create new recipes and perfect existing ones.
"We are going to start with three definite flagships, we are going to have an IPA, we'll have an amber ale and we are going to open up the doors also with nitrogen poured milk stout. On top of that, we will have a rotating seasonal," says Simpson.
The co-founders say they are planning to open their doors to the public in the spring. Their beer will be sold in-house and at local retailers.
