Forthcoming farmhouse brewery Fair Isle Brewing, a project of two former homebrewers, has signed a lease on a space in Ballard, the Eater Seattle reported on August 20.
When it opens in the summer of 2019, Fair Isle will serve a “large range of mixed culture farmhouse and wild beers, including Saison, Grisette, Biere de Garde, ‘Farmhouse’, and American Sour beer.”
The project was originally announced back in 2016, with initial plans to open this year. Fair Isle has an equity partner in respected Austin, Texas brewery Jester King, which also specializes in farmhouse-style beers.
Fair Isle co-founders Andrew Pogue and Geoffrey Barker plan to make beers that “will include locally foraged items such as fireweed, elderberries, mushrooms etc and many will also be refermented on fruit. We also plan to have a coolship and produce true spontaneously fermented ‘wild’ beers.”
The brewery hasn’t published an address yet, but promises to share that detail along with renderings of the space via Facebook next month.
