A new brewery in Ontario’s Peel Region focused on “mixed-culture fermentation and hop-forward pale beers” has released its first pair of beers, Canadian Beer News reported on November 12.

Sonnen Hill Brewing has been founded by Calum Hill, a brewer who spent eight years training and working in the United Kingdom before returning home to Ontario and establishing the brewery on Heart Lake Road Farm, a 37-acre farm owned by his parents.

Named in honour of Brauerei zur Sonne, a brewery owned and operated from 1822 to 1982 by Bavarian ancestors on his mother’s side, as well as his own family surname, Sonnen Hill has launched with two beers that fall into the “hop-forward pale” category – Stealing Faces (4.5% abv), a pale ale dry hopped with Mosaic lupulin pellets, Galaxy, and Vic-Secret; and Gee Whiz (3.9% abv), a blonde ale dry hopped with Mosaic and Amarillo.

Sonnen Hill beers are currently available exclusively on draught, and can be found at select bars in Ontario, including Bar Lupulus in Ottawa, Birreria Volo in Toronto, and Arabella Park in Waterloo. A brewery bottle shop is planned to be opened in the future.
