The historic H.O. Adler Building in downtown Boerne is now home to the newest Hill Country brewery. The Tusculum Brewing Co. started pouring out the first wave of freshly made beers in early September, mySanAntonio.com reported on November 7.

Tusculum was the original name of the community that was later renamed Boerne in 1852. The brewery has an ownership group that includes seven people, including head brewer Tripp Mathews, who live in the area and who all share a common love of beer.

The brewery has a tasting room accessible through the front of the building, as well as a beer garden, brewhouse and second bar area in the back. Patrons are directed where to go for a fresh cold one based on staffing and the weather (front when cold, back when warm).

There is room for 12 beers on the tap lines in both bar areas, with nine currently available. Flavors range from a lineup of pale ales to a Mexican lager and a few dark beers and porters.

“We started with this plan under the notion that there was plenty of opportunity to play a part in turning Boerne into a destination beer community,” co-owner Paige Mathews said.

To go along with the beer, Tusculum customers also can get a bite to eat with sandwiches, salads and charcuterie available from the cold kitchen. Plans are to add kitchen equipment at a later date to expand to hot food options.

Mathews said that they are likely to add additional days of service as well.

Tusculum Brewing Co., 236 S. Main Street in Boerne, 830-428-0596. Hours: 3 p.m. to 10 p.m. Fridays, 11 a.m. to 10 p.m. Saturdays, 12 p.m. to 7 p.m. Sundays.
